Dhania Bean Wrap

Wraps filled with Garam Masala spiced butter beans, lemon and mint red cabbage, sour cream, fresh coriander and dhania chutney.




Ingredients to serve 2

  • 1 tin x butter beans – rinse
  • ½ x onion – slice thinly
  • 1 clove x garlic – crush, peel and chop finely
  • 5g x fresh ginger – peel and grate finely
  • 1 ½ tsp x Dhania mix
  • ½ tbsp x tomato paste
  • 3 tbsp x water
  • ½ x fresh chilli – deseed and slice
  • ½ x lemon – halve and juice
  • 2 x tortilla wraps
  • 2 tbsp x dhania chutney
  • 3g x fresh coriander
  • 2 tbsp x sour cream
  • ¼ x red cabbage – slice very thinly
  • 5g x mint – tear leaves
  • ¼ x red onion – cut into strips
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)

  • 6 tbsp x water
  • 1 x fresh chilli – deseed and slice
  • 1 x lemon – halve and juice
  • 4 x tortilla wraps
  • 4 tbsp x dhania chutney
  • 5g x fresh coriander
  • 4 tbsp x sour cream
  • ½ x red cabbage – slice very thinly
  • 10g x mint – tear leaves
  • ½ x red onion – cut into strips
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

Mix the cabbage, mint, red onion strips and the lemon juice in a bowl. Drizzle over some olive oil and season with salt and pepper and mix again. Taste to check seasoning.

Step 3

Place a pan on medium-high heat, add a little olive oil and sauté the onion for 5 minutes until softened. Add the garlic, fresh ginger, tomato paste, Dhania mix and cook for another 1-2 minutes. Keep moving it around in the pan so the tomato paste doesn’t burn. Add the butter beans and water and cook for 5 minutes, until the sauce had thickened.

Step 4

Just before serving, heat the tortillas for about 20 seconds on each side in a hot, dry frying pan.

Step 5

Assemble by spreading sour cream on a wrap, top with the butter bean mix, fresh chilli (optional), fresh coriander, dhania chutney and some cabbage salad. Roll up the wrap and get stuck in!
