Banting Relish Burger

A burger patty topped with homemade tomato relish, thyme mushrooms, and fresh crisp lettuce. Served with sweet potato chips and mustard mayonnaise.




Ingredients to serve 2

  • 2 x sweet potatoes – skin on, cut into thick chips
  • 300g x steak mince
  • 1 x tomatoes – cut into small cubes (5mm)
  • 1 clove x garlic – crush, peel and chop finely
  • 2 tbsp x tomato paste
  • 1½ tbsp x balsamic vinegar
  • 2 tbsp x water
  • ½ tsp x xylitol
  • ½ x lettuce – separate leaves
  • ½ x red onion – peel and slice into rings
  • 100g x button mushrooms – slice thinly
  • 3g x thyme – chop leaves roughly
  • 2½ tbsp x mayonnaise
  • ½ tbsp x Dijon mustard
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)
  • . x tin foil (from your pantry)

  • 600g x steak mince
  • 2 x tomatoes – cut into small cubes (5mm)
  • 2 cloves x garlic – crush, peel and chop finely
  • 4 tbsp x tomato paste
  • 3 tbsp x balsamic vinegar
  • 4 tbsp x water
  • 1 tsp x xylitol
  • 1 x lettuce – separate leaves
  • 1 x red onion – peel and slice into rings
  • 200g x button mushrooms – slice thinly
  • 5g x thyme – chop leaves roughly
  • 5 tbsp x mayonnaise
  • 1 tbsp x Dijon mustard
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)
  • . x tin foil (from your pantry)

Method

Step 1

Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Mix the mustard and mayonnaise and set aside.

Step 3

Place the sweet potato chips onto a tin foil lined tray. Season with salt and pepper. Drizzle with a generous amount of olive oil and mix. Roast them in the oven for 30 minutes, until soft and golden.

Step 4

Season the steak mince generously with salt and pepper. Divide the mince into 2 patties per person. Place the cheese on top of the one patty and then sandwich the cheese with the other patty on top, so that the patty has a cheese middle. Set aside on a plate in the fridge.

Step 5

Place a small pan with a little olive oil on medium-high heat. Add the tomatoes and a pinch of salt, and cook for 3 minutes. Add the garlic and tomato paste and cook for another minute. Then mix in the balsamic vinegar, xylitol and water and cook for 3-4 minutes until the relish has thickened.

Step 6

Place a pan on a medium-high heat with a little olive oil. When hot, fry the burger patties for 4-6 minutes per side. Remove and set aside.

Step 7

Add a little butter to the pan and put onto a medium-high heat. Sauté the mushrooms with the thyme and season with salt. Cook until golden, about 4 minutes.

Step 8

To assemble, stack a couple lettuce leaves, a spoonful of relish and the patty. Then top with sautéed mushrooms and serve with sweet potato and mustard mayo.
