Sausage pizza

A crispy pizza base topped with homemade tomato sauce, cheese, courgette and beef sausage. Served with chilli in oil and fresh basil.




Ingredients to serve 2

  • 2 x beef bangers
  • 2 x pizza bases
  • 100g x grated mozzarella
  • 100g x mature cheddar – grate coarsely
  • 1 tbsp x tomato paste
  • 1 x tomatoes – dice (1cm)
  • 1 x courgettes – thinly slice
  • 5g x fresh basil – remove leaves
  • ½ x fresh chilli – de-seed & slice finely
  • 1 clove x garlic – crush, peel & chop finely
  • 1 tsp x dried oregano
  • 40g x salad leaves
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)

Ingredients to serve 4

  • 4 x beef bangers
  • 4 x pizza bases
  • 200g x grated mozzarella
  • 200g x mature cheddar – grate coarsely
  • 2 tbsp x tomato paste
  • 2 x tomatoes – dice (1cm)
  • 2 x courgettes – thinly slice
  • 10g x fresh basil – remove leaves
  • 1 x fresh chilli – de-seed & slice finely
  • 2 cloves x garlic – crush, peel & chop finely
  • 2 tsp x dried oregano
  • 80g x salad leaves
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 220°C. Put a large baking tray in the oven to get hot (this will help crisp up the bottom of the pizza base). Remove the sausage meat from the skins and roll into balls (2-3cm). Mix the grated mozzarella and cheddar cheeses in a bowl.

Step 2

Tomato sauce: Place a glug of olive oil in a frying pan on medium heat. Add tomato paste and garlic and fry for one minute stirring constantly until it turns a deep red colour. Then add the diced tomatoes, dried oregano, salt and pepper. Cook, stirring frequently for another 7 minutes. Remove and set aside.

Step 3

Pizza: Coat the pizza base with the tomato sauce. Top with cheese. Cover with courgette slices and sausage balls. Season with salt and pepper. Remove the hot baking tray from the oven and place the pizza on the tray. Return to the oven to cook for 8-10 minutes until golden.

Step 4

Fresh chilli: Place the chilli slices in a small bowl and drizzle with a little olive oil.

Step 5

Green salad: Wash the salad leaves and place in a salad bowl. Drizzle with olive oil and season with salt and pepper.

Step 6

To serve: Scatter the pizza with basil leaves and chilli slices (optional for spice lovers). Add a serving of green salad on the side.
