Parmesan Roast Chicken

Oven-roasted Parmesan, thyme chicken thighs with golden baby potatoes, carrots and leeks.




Ingredients to serve 2

  • 4 x free range chicken thighs
  • 200g x baby potatoes – cut in half
  • 2 x carrots – dice (1cm)
  • 1 x leeks – slice (2cm)
  • ½ x onions – cut into wedges
  • 3g x thyme – tear roughly
  • 1 clove x garlic – crush (keep skin on)
  • 15g x parmesan – grate finely
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)

Ingredients to serve 4

  • 8 x free range chicken thighs
  • 400g x baby potatoes – cut in half
  • 3 x carrots – dice (1cm)
  • 2 x leeks – slice (2cm)
  • 1 x onions – cut into wedges
  • 5g x thyme – tear roughly
  • 2 cloves x garlic – crush (keep skin on)
  • 30g x parmesan – grate finely
  • . x olive oil (from your pantry)
  • . x salt and black pepper (from your pantry)

Method

Step 1

Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Place the baby potatoes in a pot of salted boiling water. Cook on a high heat for 5-7 minutes, until slightly softened (par-boiled). Drain and set aside.

Step 3

Place a pan on a medium-high heat. Drizzle in a little olive oil and when the pan is hot, place the chicken skin-side down. Cook until the skin is golden, about 3 minutes.

Step 4

Transfer the chicken to a large casserole dish with the carrots, leeks, onion, garlic, thyme and par-boiled potatoes. Pour over a good glug of olive oil and season generously with salt and pepper. Mix it all through. Arrange everything in one layer on the tray, with the chicken facing skin-side up. Roast for 30 minutes (shake the pan every now and then and give it a little mix so the vegetables brown all over). After 30 minutes remove the dish from the oven and sprinkle the chicken, potatoes and cauliflower with the parmesan. Roast for another 5-10 minutes, until the chicken is cooked through and the potatoes are soft.

Step 5

Serve the chicken with the golden potatoes, leeks, onions and carrots.
