Courgette Quesadilla

Courgette Quesadilla

Toasted tortillas filled with a slightly spicy courgette and bean mix topped with fresh coriander and golden sweet potato chips on the side.




Ingredients to serve 2

  • ½ x onion – slice thinly
  • 1 clove x garlic – peel, grate finely & chop
  • 1 tsp x ground cumin
  • ½ tbsp x tomato paste
  • 200g x cannellini beans – drain and rinse
  • 2 x courgettes – dice (5mm)
  • 125g x cheddar – grate coarsely
  • ½ x chilli – chop finely (optional)
  • 5g x coriander – remove stalks
  • 4 x flour tortillas
  • 2 x sweet potatoes – cut into chips (1/2 cm)
  • ½ tsp x chilli powder (optional)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

  • 1 x onion – slice thinly
  • 2 cloves x garlic – peel, grate finely & chop
  • 2 tsp x ground cumin
  • 1 tbsp x tomato paste
  • 400g x cannellini beans – drain and rinse
  • 4 x courgettes – dice (5mm)
  • 250g x cheddar – grate coarsely
  • 1 x chilli – chop finely (optional)
  • 10g x coriander – remove stalks
  • 8 x flour tortillas
  • 4 x sweet potatoes – cut into chips (1/2 cm)
  • 1 tsp x chilli powder (optional)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Method

Step 1

Preparation: Preheat the oven at 200°C. Prepare all the ingredients as indicated above.

Step 2

Sweet potato: Line a baking tray with tin foil and add the sweet potato. Cover the slices with a drizzle of olive oil, salt, pepper and chilli powder (optional) and roast at 200°C for 35 minutes.

Step 3

Bean & courgette mix: Place a frying pan on a medium-high heat, drizzle with olive oil and cook the onions with a little salt for 5 minutes. Add the garlic, cumin, courgettes and chilli. Cook until the courgettes are done – 5 minutes. Add the tomato paste and beans and cook for another 5 minutes. Season with salt and pepper to taste.

Step 4

Tortilla: Place a tortilla in a dry frying pan on a medium heat. Sprinkle a portion of the grated cheddar on the tortilla and spoon over some of the bean and courgetti mix. Place another tortilla on top and cook for 2 minutes. Flip the tortilla over and cook on the other side for another 2 minutes – until toasted and the cheese has melted.

Step 5

Serve the tortillas topped with coriander. Add a side of sweet potato chips.
