Sirloin Tacos

Seared sirloin steak strips on lettuce, topped with smoked jalapeno, spring onion, fresh coriander and sour cream, wrapped in a tortilla.




Ingredients to serve 2

  • 4 x tortilla wraps
  • 2 x sirloin steaks
  • 2 x Brenda’s smoked jalapenos – slice
  • 1 head x lettuce
  • 2 x tomatoes – dice (5mm) & season
  • 1 x spring onions – slice
  • 5g x fresh coriander – pick off leaves
  • 3 tbsp x sour cream
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)
  • . x tin foil (from your pantry)

  • 8 x tortilla wraps
  • 4 x sirloin steaks
  • 4 x Brenda’s smoked jalapenos – slice
  • 2 heads x lettuce
  • 3 x tomatoes – dice (5mm) & season
  • 2 x spring onions – slice
  • 10g x fresh coriander – pick off leaves
  • 6 tbsp x sour cream
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)
  • . x tin foil (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Lettuce: remove outer leaves and discard. Separate the rest of the lettuce leaves. Rinse and pat dry.

Step 3

Sirloin steak: Put a dry griddle/frying pan on high heat. Rub both sides of each steak with salt, pepper and olive oil. Place steaks in the hot pan and sear for about 3 minutes either side for a medium steak, turning only once (using tongs/spoons). Adjust time to suit your preference. When done, remove and set aside on a plate covered with tin foil to rest for about 10 minutes. Using a very sharp knife, slice the steaks against the grain: this means cutting across (and not parallel to) the long muscle fibres in the meat creating short fibres in each piece and delivering tender slices of meat. Season with salt.

Step 4

Tortilla wraps: Just before serving, heat the tortillas for about 30 seconds on each side in a hot, dry frying pan (high heat).

Step 5

To serve: Place the tortilla wrap on a plate topped with lettuce leaves, steak strips, jalapeno, spring onion, tomato, fresh coriander. Add a dollop of sour cream.
