Warm Spiced Beef

Steak mince & aubergines flavoured with Warm Middle Eastern spices served with a herby lemon and garlic salsa and a dollop of yoghurt. Baby spinach leaves on the side.




Ingredients to serve 2

  • 1 x aubergines – dice (1cm)
  • 300g x steak mince
  • ½ x onion – peel & chop finely
  • 1½ cloves x garlic – peel & grate finely
  • 3 tsp x Warm Spice Mix
  • 2 x tomatoes – dice (5mm)
  • 10g x mint – pick leaves & chop finely
  • 10g x coriander – chop finely
  • ½ x chilli – chop finely
  • ½ x lemon
  • 30ml x yoghurt
  • 40g x baby spinach
  • 2 tbsp x olive oil for the salsa (from your pantry)
  • salt and pepper (from your pantry)
  • olive oil (from your pantry)

Ingredients to serve 4

  • 2 x aubergines – dice (1cm)
  • 600g x steak mince
  • 1 x onion – peel & chop finely
  • 3 cloves x garlic – peel & grate finely
  • 6 tsp x Warm Spice Mix
  • 4 x tomatoes – dice (5mm)
  • 20g x mint – pick leaves & chop finely
  • 20g x coriander – chop finely
  • 1 x chilli – chop finely
  • 1 x lemon
  • 60ml x yoghurt
  • 80g x baby spinach
  • 4 tbsp x olive oil for the salsa (from your pantry)
  • salt and pepper (from your pantry)
  • olive oil (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Lemons: Using the fine side of the box grater, grate the green/yellow peel of the lemon to create lemon zest.

Step 3

Aubergine: Place a few generous glugs of olive oil in a large frying pan on high heat. When hot, add the aubergine and fry for 5 minutes until golden. Add more olive oil if it looks dry. Transfer to a plate and set aside.

Step 4

Beef mince mix: Return the frying pan to the stove with a few more glugs of olive oil – medium-high heat. Cook the onion for 5 minutes, with a little salt, until softened. Add the Warm Spice Mix and TWO THIRDS of the garlic and cook for 1 minute. Add the beef mince and break up with a spoon. Season with salt and pepper. Cook for 5 minutes until nicely browned. Add tomatoes, aubergine and cook for another 10 minutes. Add a squeeze of lemon juice and season to taste.

Step 5

Salsa: Mix these ingredients in a bowl – mint, coriander, lemon zest, chilli (optional), the other THIRD of the garlic, olive oil (see quantity in ingredients above). Season with salt, pepper and a squeeze of lemon juice.

Step 6

Serve the beef mince on a plate topped with yoghurt and salsa with baby spinach leaves on the side.
