Sesame Chicken

Sesame Chicken

Tender chicken fillets served with saucy stir fry veggies and brown rice. Topped with toasted sesame seeds.




Ingredients to serve 2

  • ¾ cup x parboiled brown rice
  • 2 cups x boiling water (for the brown rice)
  • ½ head x broccoli – cut into florets
  • 2 x carrots
  • 200g x chicken fillets
  • 1 tsp x sesame seeds
  • ¼ tsp x chicken stock fonds
  • 30ml x boiling water (for the sauce)
  • 30ml x pineapple juice
  • 1 sachet x honey
  • ½ tbsp x soy sauce
  • 20g x ginger – peel & chop finely
  • 1 clove x garlic – peel, grate finely & chop
  • ½ tbsp x sriracha
  • 5g x fresh coriander - discard stalks
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Ingredients to serve 4

  • 1 ½ cup x parboiled brown rice
  • 4 cups x boiling water (for the brown rice)
  • 1 head x broccoli – cut into florets
  • 4 x carrots
  • 400g x chicken fillets
  • 2 tsp x sesame seeds
  • ½ tsp x chicken stock fonds
  • 60ml x boiling water (for the sauce)
  • 60ml x pineapple juice
  • 2 sachets x honey
  • 1 tbsp x soy sauce
  • 40g x ginger – peel & chop finely
  • 2 cloves x garlic – peel, grate finely & chop
  • 1 tbsp x sriracha
  • 10g x fresh coriander - discard stalks
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above. Boil the kettle.

Step 2

Carrots: Cut into matchsticks – peel the carrots, then cut them in half crossways. Now slice each piece lengthways (5mm). Finally place each piece down flat and cut lengthways again into matchsticks – about 5mm wide.

Step 3

Brown rice: Pour the boiling water (see quantity above for the brown rice) into a saucepan, add the rice and some salt. Bring to the boil then gently simmer with the lid on for 18-20 minutes on a low heat. Drain if there is any excess water.

Step 4

Sesame seeds: Place a small pan on high heat and dry toast the sesame seeds until lightly browned - about a minute. Toss often to make sure they don’t burn. Remove from stove and set aside.

Step 5

Sauce: In a bowl, mix together these ingredients: ginger, garlic, honey, pineapple juice, soy sauce, boiling water (see above for quantity for the sauce), chicken stock fonds and sriracha.

Step 6

Chicken & veg stir-fry: Place a large frying pan on a medium-high heat. Add a drizzle of olive oil, when the pan is hot add the chicken fillets and cook for 1 minute. Add HALF the sauce and cook for another minute. Add the broccoli florets, carrots and the REST of the sauce to the pan and cook for 3 minutes until the chicken is cooked through and the vegetables are cooked, but with a slight bite.

Step 7

Serve the chicken and veg stir-fry with the rice. Top with the sesame seeds and fresh coriander.
