Bibimbap

A traditional Korean dish - black rice served with Asian flavoured veggies: bean sprouts, spring onions, carrots topped with nori, fresh coriander, sesame seeds and a fried egg.




Ingredients to serve 2

  • 1 tbsp x soy sauce
  • 1 tbsp x sesame oil
  • 1 sachet x honey
  • ¼ tbsp x sesame seeds
  • 1 clove x garlic – peel & grate
  • 1 x limes
  • ½ x chilli (optional) – slice finely
  • ¾ cup x black rice
  • 2 x eggs (from your pantry)
  • 4 x spring onions – trim off ends
  • 1½ x carrots – cut into matchsticks
  • 1 sheet x nori – tear into 2cm strips
  • 5g x fresh coriander
  • 15g x bean sprouts
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)

Ingredients to serve 4

  • 2 tbsp x soy sauce
  • 2 tbsp x sesame oil
  • 2 sachets x honey
  • ½ tbsp x sesame seeds
  • 2 cloves x garlic – peel & grate
  • 2 x limes
  • 1 x chilli (optional) – slice finely
  • 1½ cups x black rice
  • 4 x eggs (from your pantry)
  • 8 x spring onions – trim off ends
  • 3 x carrots – cut into matchsticks
  • 2 sheets x nori – tear into 2cm strips
  • 10g x fresh coriander
  • 30g x bean sprouts
  • . x olive oil (from your pantry)
  • . x salt & black pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above. Boil the kettle.

Step 2

Rice: Bring a saucepan of lightly salted water to the boil. Add the black rice and boil gently for 15-20 minutes until cooked but still slightly chewy. Drain and keep warm in a colander over a saucepan of hot water.

Step 3

Carrots: Peel and cut in half crossways. Slice each piece lengthways (5mm). Finally place each piece down flat and cut lengthways again into a matchstick – about 5mm wide.

Step 4

Lime: Using the fine side of a box grater, grate the peel of the lime to create lime zest, then cut in half and juice. (See “How to zest a lime/lemon” video on Daily Dish YouTube channel: Quick Tips Playlist).

Step 5

Sesame seeds: Place a small pan on high heat and dry toast the sesame seeds until lightly browned - about a minute. Shake the pan often so they don’t burn.

Step 6

Sauce: Mix these ingredients together in a small bowl – soy sauce, sesame oil, honey, sesame seeds, garlic, lime juice and zest, chilli (optional).

Step 7

Veggies: Place a few glugs of olive oil in a large frying pan on medium-high heat. Cook the carrots and spring onion in HALF the sauce for about 2 minutes. You want them crunchy. Transfer to a plate/bowl and set aside.

Step 8

Egg: Using the same pan, add a little more olive oil and set the heat to medium. Break the egg and slip into the pan, one at a time. Fry sunny side up for 2 minutes until the white is set and the yolk (yellow part) is still runny. Season with salt and pepper.

Step 9

Serve the black rice on a plate, topped with bean sprouts, carrots, spring onion and the fried egg. Tuck the nori strips under the egg. Drizzle over the rest of the sauce and garnish with fresh coriander leaves.
