Refried Bean Tostadas with Salsa

Smoked paprika gives this dish amazing flavor. Refried beans served on a bed of crispy tortillas quarters and served with a tangy avo salsa and sour cream.




Ingredients to serve 2

  • 4 x tortilla wraps
  • 1 x onions – peel and chop finely
  • 1 x peppers – cut off end, de-seed and dice (1cm)
  • 1 tsp x cumin seeds
  • 1 tsp x smoked paprika
  • 1 tin x kidney beans – open, drain and rinse
  • 2 tbsp x tap water
  • 1½ x tomatoes – dice (1cm)
  • 1 x spring onions – cut off ends and slice
  • 1 x avocadoes – peel and dice (1cm)
  • 1 x limes – halve and juice
  • 10g x fresh coriander – chop coarsely
  • 75ml x sour cream
  • . x olive oil, salt and pepper (from your pantry)

  • 8 x tortilla wraps
  • 2 x onions – peel and chop finely
  • 2 x peppers – cut off end, de-seed and dice (1cm)
  • 2 tsp x cumin seeds
  • 2 tsp x smoked paprika
  • 2 tins x kidney beans – open, drain and rinse
  • 4 tbsp x tap water
  • 3 x tomatoes – dice (1cm)
  • 2 x spring onions – cut off ends and slice
  • 2 x avocadoes – peel and dice (1cm)
  • 2 x limes – halve and juice
  • 20g x fresh coriander – chop coarsely
  • 125ml x sour cream
  • . x olive oil, salt and pepper (from your pantry)

Method

Step 1

Preheat the oven to 180°C. Prepare all ingredients as indicated above.

Step 2

Refried beans: place a few glugs of olive oil in a large frying pan on medium to high heat. Sauté the onions and green peppers for about 4 or 5 minutes until they begin to soften. Add the cumin seeds and smoked paprika and sauté for one minute more. Add the kidney beans and tap water (see quantity above) and cook, stirring, until the beans are heated through. Remove from stove and mash the beans roughly with a fork. Season with salt and pepper and HALF the lime juice. Set aside.

Step 3

Wraps: cut the tortilla wraps into quarters. Brush each wrap lightly with a little olive oil using a pastry brush or a piece of paper towel dipped in oil. Place on a baking tray and bake until crisp – about 5 minutes. Keep warm.

Step 4

Salsa: toss the avocado, spring onions, tomatoes and coriander together in a large bowl and season with salt and pepper. Stir through the other HALF of the lime juice.

Step 5

To serve, place a layer of the refried beans onto the wrap wedges and top with sour cream and salsa.
