Chicken Slaw Bunless Burger

Cayenne flavoured chicken breasts, lettuce, tomato and slaw with roasted Parmesan cauliflower florets on the side. Sprinkled with toasted sesame seeds.




Ingredients to serve 2

  • 2 x chicken breasts
  • 1 x tomatoes - slice
  • ½ tsp x cayenne pepper
  • 1 head x lettuce – pull off leaves
  • 1 tbsp x sesame seeds
  • ⅛ x cabbage – slice finely
  • 2 x spring onions – slice at an angle
  • 1 tbsp x yoghurt
  • 1 tbsp x mayonnaise
  • ½ x lemon
  • ½ head x cauliflower – cut into florets (5mm)
  • 20g x Parmesan – grate finely
  • olive oil (from your pantry)
  • salt and black pepper (from your pantry)
  • tin foil (from your pantry)
  • cling film (from your pantry)

  • 2 tbsp x sesame seeds
  • ¼ x cabbage – slice finely
  • 4 x spring onions – slice at an angle
  • 2 tbsp x yoghurt
  • 2 tbsp x mayonnaise
  • 1 x lemon
  • 1 head x cauliflower – cut into florets (5mm)
  • 40g x Parmesan – grate finely
  • olive oil (from your pantry)
  • salt and black pepper (from your pantry)
  • tin foil (from your pantry)
  • cling film (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Lemon: Using the fine side of the grater, grate the skin of the lemon to create zest. Then cut the lemon in half and juice.

Step 3

Cauliflower: Line a baking tray with tin foil. Place a single layer of cauliflower florets on the tray. Drizzle with olive oil and season with salt and pepper. Bake for 10 minutes. Scatter with grated parmesan and roast for another 5 minutes until golden and slightly charred.

Step 4

Sesame seeds: Place a small pan on high heat and dry toast the sesame seeds until lightly browned - about a minute. Shake the pan often to prevent them from burning.

Step 5

Slaw: Mix these ingredients in a salad bowl – cabbage, spring onions, mayonnaise, yoghurt, lemon zest, salt, pepper and HALF the toasted sesame seeds. Add a little lemon juice to taste.

Step 6

Chicken: Place the chicken breasts (one at a time) between two sheets of cling film and bash with a full wine bottle or rolling pin to flatten (7mm). Rub the chicken with olive oil and scatter all over with cayenne pepper and freshly ground salt and pepper. Place a large frying pan over medium-high heat. Cook the chicken for 3 minutes per side, until cooked through and golden.

Step 6

Serve chicken, lettuce, tomato and slaw on a plate with roasted cauliflower on the side. Sprinkle with the rest of the sesame seeds.
