Jalapeno Chicken Bowl

Spicy bowl of chicken in a tomato sauce with smoked jalapenos and courgettes, topped with mature cheddar. Roasted broccoli on the side.




Ingredients to serve 2

  • 2 x chicken breasts – dice (1cm)
  • 40g x cheddar cheese – grate coarsely
  • 2 x tomatoes – dice (1cm)
  • 1 tbsp x tomato paste
  • ½ x onion – peel & chop finely
  • 1 clove x garlic – peel, grate & chop
  • 5g x fresh coriander – pick leaves & chop
  • 2 x courgettes – dice (½cm)
  • 2 x Brenda’s smoked jalapenos – dice (1cm)
  • ½ x broccoli – cut into florets
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Ingredients to serve 4

  • 4 x chicken breasts – dice (1cm)
  • 80g x cheddar cheese – grate coarsely
  • 4 x tomatoes – dice (1cm)
  • 2 tbsp x tomato paste
  • 1 x onion – peel & chop finely
  • 2 cloves x garlic – peel, grate & chop
  • 10g x fresh coriander – pick leaves & chop
  • 4 x courgettes – dice (½cm)
  • 4 x Brenda’s smoked jalapenos – dice (1cm)
  • 1 x broccoli – cut into florets
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat oven to 200°C. Prepare all ingredients as indicated above. Season chicken with salt, pepper and cayenne pepper.

Step 2

Broccoli: Line a baking tray with tin foil. Place the broccoli florets on the tray in a single layer. Drizzle with olive oil and season with salt and pepper. Roast for 10-12 minutes until cooked – but still a little crunchy – and slightly charred.

Step 3

Chicken mix: Place a few glugs of olive oil in a large frying pan on medium-high heat. Cook the onion with salt for 5 minutes until softened. Add garlic, tomato paste, chicken and courgettes. Mix well and cook for 2 minutes. Add tomatoes and jalapenos. Cook for another 8-10 minutes until the chicken has cooked through.

Step 4

Serve the chicken in a bowl topped with coriander, black pepper and cheddar cheese. Add a side portion of roasted broccoli.
