Smoked Jalapeno Bowl

Spicy kidney beans in a tomato sauce with smoked jalapenos topped with coriander. Side portion of cheesy nachos.




Ingredients to serve 2

  • ½ tin x kidney beans – open & drain
  • 2 x tortillas
  • 40g x cheddar cheese – grate coarsely
  • 2 x tomatoes – dice (1cm)
  • 1 tbsp x tomato paste
  • ½ x onion – peel & chop finely
  • 1 clove x garlic – peel, grate & chop
  • ½ tsp x paprika
  • 5g x fresh coriander – pick leaves & chop
  • 1 x courgettes – dice (½ cm)
  • 2 x Brenda’s smoked jalapenos – dice (1cm)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Ingredients to serve 4

  • 1 tin x kidney beans – open & drain
  • 4 x tortillas
  • 80g x cheddar cheese – grate coarsely
  • 4 x tomatoes – dice (1cm)
  • 2 tbsp x tomato paste
  • 1 x onion – peel & chop finely
  • 2 cloves x garlic – peel, grate & chop
  • 1 tsp x paprika
  • 10g x fresh coriander – pick leaves & chop
  • 2 x courgettes – dice (½ cm)
  • 4 x Brenda’s smoked jalapenos – dice (1cm)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Method

Step 1

Preparation: Preheat oven to 250°C. Prepare all ingredients as indicated above.

Step 2

Bean mix: Place a few glugs of olive oil in a large frying pan on medium-high heat. Cook the onion with salt for 5 minutes until softened. Add garlic, paprika, tomato paste, kidney beans, courgettes. Mix well and cook for 2 minutes. Add tomatoes and jalapenos. Cook for another 8-10 minutes until the tomatoes are cooked. Season to taste.

Step 3

Tortillas: Place the tortilla wraps on a baking tray. Scatter each one with grated cheddar. Bake in the oven for 5-7 minutes until the cheese has melted and wrap is crispy. Remove from oven and cut each wrap into nacho triangles.

Step 4

Serve the smoked jalapeno beans in a bowl topped with coriander and black pepper. Add a side portion of cheesy nachos.
