Proper Fry Up

A tasty plate of roasted paprika potatoes with a smoky tomato bean mix, chipolata sausages, wilted chard and a fried egg, sunny side up.




Ingredients to serve 2

  • ½ tin x cannellini beans – open & drain
  • ½ x onion – peel & chop finely
  • 2 x cloves
  • ½ x carrot – dice (5mm)
  • ½ stick x celery stick – cut off ends, dice (5mm)
  • 1 x tomatoes – dice (1cm)
  • ½ sachet x tomato paste
  • ½ tsp x smoked paprika
  • 250g x pork chipolatas (sausages)
  • 2 x eggs
  • 100g x Swiss chard – remove stalk, slice (4cm)
  • 300g x baby potatoes – cut into quarters
  • ¾ cup x water
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

  • 1 x carrot – dice (5mm)
  • 1 stick x celery stick – cut off ends, dice (5mm)
  • 2 x tomatoes – dice (1cm)
  • 1 sachet x tomato paste
  • 1 tsp x smoked paprika
  • 500g x pork chipolatas (sausages)
  • 4 x eggs
  • 200g x Swiss chard – remove stalk, slice (4cm)
  • 600g x baby potatoes – cut into quarters
  • 1½ cups x water
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Baby potatoes: Line a baking tray with tin foil. Place a single layer of baby potatoes on the tray. Drizzle with olive oil and season with salt, pepper and HALF the smoked paprika. Bake for 15-20 minutes until golden.

Step 3

Bean mix: Place a few glugs of olive oil in a large frying pan on medium-high heat. Cook the onion, celery and carrot with a little salt for 5 minutes until softened. Add tomato paste, tomato, beanscloves and the rest of the smoked paprika. Cook for 1 minute. Add water (see quantity in ingredients above). Mix well and cook for another 10 minutes. Season with salt and pepper.

Step 4

Chipolatas: Place a little olive oil in a frying pan on medium heat. Cook the sausages for 10 minutes, shaking the pan from time to time, until golden and cooked.

Step 5

Egg: Using the same pan, add a little more olive oil and set the heat to medium. Break the egg and slip into the pan, one at a time. Fry sunny side up for 2 minutes until the white is set and the yolk (yellow part) is still runny. Season with salt and pepper.

Step 6

Swiss chard: Place a knob of butter in a frying pan on medium heat. Sauté the Swiss chard with a little salt for a minute until wilted.

Step 7

Plate a portion each of potato, bean mix (watch out for the cloves!), sausages, egg and Swiss chard.
