Halloumi Slaw Burger

Cabbage slaw, halloumi cheese and tomato in a rustic bun. Roasted baby potato chips on the side.




Ingredients to serve 2

  • 400g x baby potatoes – cut in half
  • 100g x Halloumi – slice (1cm thick)
  • 1 x tomatoes – slice & season
  • 2 x Portuguese rolls – cut in half
  • ⅛ x cabbage – slice finely
  • 1 x carrots
  • 5g x fresh coriander – pick off leaves
  • 1 tbsp x yoghurt
  • 1 tbsp x mayonnaise
  • ½ x lemon
  • olive oil (from your pantry)
  • salt and black pepper (from your pantry)
  • tin foil (from your pantry)
  • paper towel (from your pantry)

  • 800g x baby potatoes – cut in half
  • 200g x Halloumi – slice (1cm thick)
  • 2 x tomatoes – slice & season
  • 4 x Portuguese rolls – cut in half
  • ¼ x cabbage – slice finely
  • 2 x carrots
  • 10g x fresh coriander – pick off leaves
  • 2 tbsp x yoghurt
  • 2 tbsp x mayonnaise
  • 1 x lemon
  • olive oil (from your pantry)
  • salt and black pepper (from your pantry)
  • tin foil (from your pantry)
  • paper towel (from your pantry)

Method

Step 1

Preparation: Preheat oven to 200°C. Prepare all ingredients as indicated above. Boil the kettle (for the baby potatoes).

Step 2

Baby potatoes: Place a large saucepan of salted boiling water on high heat. Boil the potatoes for 10 minutes. Drain and set aside. Line a baking tray with tin foil. Lay the potatoes out on the tray in a single layer. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 15-20 minutes until golden and soft.

Step 3

Lemon: Using the fine side of the grater, grate the skin of the lemon to create zest. Then cut the lemon in half and juice.

Step 4

Slaw: Mix these ingredients in a salad bowl – cabbage, coriander, mayonnaise, yoghurt, lemon zest and season with salt, pepper and lemon juice to taste.

Step 5

Halloumi: Place a large frying pan on medium heat. Dry fry the halloumi slices, 1 minute per side, until golden. Transfer to paper towel.

Step 6

Portuguese rolls: Place the pan you used to cook the halloumi on medium-high heat and toast the buns lightly.

Step 7

Assemble the burger: add a serving of slaw, tomatoes and halloumi inside the roll. Serve with a side of roasted baby potato chips.
