Beef Koftas

Beef koftas served with chilli flavoured yellow rice and tomato salad. Topped with lemony, dill and garlic yoghurt sauce.




Ingredients to serve 2

  • 250g x beef mince
  • 4 x bamboo skewers
  • ½ x onion – peel & chop finely
  • ½ tsp x cinnamon
  • ¼ tsp x allspice
  • 5g x parsley – chop finely
  • ½ cup x basmati rice
  • ½ tsp x turmeric
  • ½ tsp x chilli flakes (optional)
  • 2 x tomatoes – dice (½ cm)
  • 60ml x yoghurt
  • 5g x dill – chop finely
  • 5g x mint – pick off leaves, chop finely
  • ½ x lemon
  • ¼ clove x garlic – peel, grate & chop finely
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Ingredients to serve 4

  • 500g x beef mince
  • 8 x bamboo skewers
  • 1 x onion – peel & chop finely
  • 1 tsp x cinnamon
  • ½ tsp x allspice
  • 10g x parsley – chop finely
  • 1 cup x basmati rice
  • 1 tsp x turmeric
  • 1 tsp x chilli flakes (optional)
  • 4 x tomatoes – dice (½ cm)
  • 120ml x yoghurt
  • 10g x dill – chop finely
  • 10g x mint – pick off leaves, chop finely
  • 1 x lemon
  • ½ clove x garlic – peel, grate & chop finely
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Lemon: Using the fine side of a box grater, grate the peel of the lemon to create lemon zest, then cut in half and juice.

Step 3

Rice: Bring a saucepan of lightly salted water to the boil. Add the rice and turmeric and cook for 15 minutes. Drain and add a generous knob of butter, chilli flakes (optional) and salt and pepper to taste.

Step 4

Koftas: Mix these ingredients together: beef mince, onion, cinnamon, allspice, parsley. Season generously with salt and pepper. Divide the mixture into portions (as many portions as you have skewers). Roll each portion into a fat cigar shape and thread onto a bamboo skewer. Put a little olive oil in a frying pan on medium- high heat. When hot, place the koftas in the pan and cook for 10 minutes, turning to brown all over. Don’t turn until they are well sealed or the meat will stick to the grill or pan. Set aside when done.

Step 5

Yoghurt sauce: In a small bowl, mix together the yoghurt, mint, garlic, HALF the lemon juice, HALF the lemon zest and HALF the dill. Season with salt and pepper to taste.

Step 6

Tomato salad: In a salad bowl, mix together the tomato, HALF the lemon juice, HALF the lemon zest and HALF the dill. Drizzle generously with olive oil and season with salt and pepper to taste.

Step 7

Serve the koftas on a plate with a serving of yellow rice and tomato salad on the side. Top with a dollop of yoghurt sauce.
