Pastrami & Hot Slaw

Soft, oval ciabattas with a filling of pastrami and creamy, hot slaw. Served with a side of potato chips and a sriracha dipping sauce.




Ingredients to serve 2

  • 2 x ciabattas (oval)
  • 200g x pastrami
  • ⅛ x cabbage – slice finely
  • 1 ½ x carrots – grate
  • 2 tbsp x mayonnaise
  • ½ tsp x Dijon mustard
  • 2 tbsp x sriracha
  • 5g x dill – chop finely
  • 2 x potatoes – cut into chips (1cm – skin on)
  • ½ x chilli – deseed & chop finely
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

  • 4 x ciabattas (oval)
  • 400g x pastrami
  • ¼ x cabbage – slice finely
  • 3 x carrots – grate
  • 4 tbsp x mayonnaise
  • 1 tsp x Dijon mustard
  • 4 tbsp x sriracha
  • 10g x dill – chop finely
  • 4 x potatoes – cut into chips (1cm – skin on)
  • 1 x chilli – deseed & chop finely
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all the ingredients as indicated above.

Step 1

Potatoes: Line a baking tray with tin foil, add a few glugs of olive oil (enough to coat), salt and pepper. Roast the potatoes for 30minutes until golden and cooked.

Step 1

Ciabatta: Place the ciabatta in the hot oven and bake for 10-15 minutes until warm and crusty. Remove from the oven and allow to cool.

Step 1

Hot slaw mix: Mix the mayonnaise and mustard with the grated carrots, cabbage, dill and chilli (optional). Cut the ciabatta in half, butter it, lay on the pastrami and spoon over the slaw.

Step 1

Serve with a side of potato chips and sriracha for dipping the chips into.
