Posh Sub

Beef sausage served on a bed of lettuce in a sub roll topped with caramelized onion and Chipotle mayo. A serving of roasted baby potato chips on the side.




Ingredients to serve 2

  • 2 x sub rolls
  • 2 x beef sausages
  • 1 x onions – peel & slice finely
  • 2 tsp x Chipotle Tabasco
  • 1 tbsp x mayonnaise
  • ½ head x cos lettuce – slice (1cm)
  • 300g x baby potatoes – cut into quarters
  • ½ tsp x cayenne pepper
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

  • 4 x sub rolls
  • 4 x beef sausages

  • 600g x baby potatoes – cut into quarters
  • 1 tsp x cayenne pepper
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat oven to 200°C. Prepare all ingredients as indicated above. Boil the kettle (for the potatoes).

Step 2

Onions: Place a generous knob of butter and a little salt in a large frying pan on medium heat. Add the onions and cook for 15-20 minutes until caramelized. Stir often so that they don’t burn.

Step 3

Potatoes: Place a large saucepan of salted water on high heat. Boil the baby potatoes for 15 minutes. Drain in a colander. Line a baking tray with tin foil. Lay the potatoes on the tray and season with salt, pepper and cayenne pepper. Drizzle with olive oil. Roast in the oven for 15 minutes until browned.

Step 4

Sub rolls: Turn the oven down to 180°C. Bake the sub rolls for 5 minutes. When done, slice in half lengthways.

Step 5

Sausages: Place a few glugs of olive oil in a large frying pan on medium heat. Cook the sausages for 10-12 minutes until golden and cooked through.

Step 6

Chipotle mayo: Mix the Chipotle Tabasco and mayonnaise in a small bowl. Set aside.

Step 7

Serve the sausage in the sub roll on a bed of lettuce. Top with caramelized onion and Chipotle mayo. Add a serving of potato chips on the side.
