Smoked Chipotle Tortilla

Smoked Chipotle Tortilla

Tortilla, topped with seared rump steak strips, cheddar and avo salsa. Served with a dollop of smoked chipotle mayo.




Ingredients to serve 2

  • 2 x Rump Steaks – 150g each
  • ½ x avocado – peel & dice (1cm)
  • 1 x tomatoes – dice (1cm)
  • ½ x lemon
  • 2 x radishes – slice thinly
  • 40g x mature cheddar – grate coarsely
  • 5g x coriander – pick off leaves
  • 2 x tortilla wraps
  • 2 tbsp x mayonnaise
  • 1 tsp x chipotle tabasco
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Ingredients to serve 4

  • 4 x Rump Steaks – 150g each
  • 1 x avocado – peel & dice (1cm)
  • 2 x tomatoes – dice (1cm)
  • 1 x lemon
  • 4 x radishes – slice thinly
  • 80g x mature cheddar – grate coarsely
  • 10g x coriander – pick off leaves
  • 4 x tortilla wraps
  • 4 tbsp x mayonnaise
  • 2 tsp x chipotle tabasco
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Lemon: Grate the peel of the lemon to create lemon zest, then cut in half and juice.

Step 3

Salsa: Mix the avocado, tomatoes, radishes and lemon zest together. Dress with some olive oil, salt, pepper and lemon juice to taste.

Step 4

Steak: Put a frying pan on medium-high heat. On a chopping board rub both sides of each steak with salt, pepper and olive oil. Place steaks in hot pan and sear for 1 minute either side until golden and charred, but still slightly pink inside (medium-rare). Adjust time to suit your preference. When done, remove and set aside on a plate covered with tin foil to rest for about 5 minutes.

Step 5

Mayonnaise chipotle: Mix together the mayonnaise and chipotle tabasco.

Step 6

Tortillas: Just before serving, heat the tortillas for about 20 seconds on each side in a hot, dry frying pan.

Step 7

To serve, place a flat tortilla on each plate, add the, cheddar steak and salsa and top with chipotle mayonnaise and fresh coriander.
