Smoked Mackerel & Courgette Carbonara

Smoked Mackerel & Courgette Carbonara

Delicate fillets of smoked and peppered mackerel broken up into a traditional spaghetti carbonara with courgettes and scattered with parmesan cheese.




Ingredients to serve 2

  • 250g x spaghetti
  • 4 x courgettes – cut off ends and slice (3mm)
  • 1 clove x garlic – crush, peel and chop finely
  • 25g x parmesan cheese – grate finely
  • 1½ x eggs (from your pantry)
  • 90ml x cream
  • 100g x smoked mackerel – break into bite size pieces
  • . x olive oil, salt and pepper (from your pantry)

Ingredients to serve 4

  • 500g x spaghetti
  • 8 x courgettes – cut off ends and slice (3mm)
  • 2 cloves x garlic – crush, peel and chop finely
  • 50g x parmesan cheese – grate finely
  • 3 x eggs (from your pantry)
  • 180ml x cream
  • 200g x smoked mackerel – break into bite size pieces
  • . x olive oil, salt and pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above. Beat the eggs in a small bowl.

Step 2

Bring a large saucepan of lightly salted water to the boil. Add a few drops of olive oil and the spaghetti and cook for 6 to 8 minutes. Don’t overcook the pasta - you want it al dente, that’s slightly chewy and uniformly translucent. Once cooked, drain and keep warm in a colander over a saucepan of hot water. Sprinkle spaghetti with a little olive oil to prevent it from sticking together.

Step 3

Heat a glug of olive oil in a frying pan over medium to high heat. Sauté the baby marrows for about 3 or 4 minutes, tossing frequently, until golden. Turn the heat down to medium and add garlic and cook for another minute. Now add the pasta and toss to combine and heat through. Pasta should be piping hot to cook eggs sufficiently.

Step 4

Remove pan from heat and scatter over cheese and fish. Pour over beaten eggs and cream and shake pan gently to mix everything. Do not return to heat, eggs will cook to perfection in the residual heat. Season well with salt and pepper.

Step 5

To serve, divide pasta between bowls.
