Chickpea Burgers

Chickpea Burgers

Delicious chickpea burgers, served on a toasted bun topped with a spicy sriracha mayonnaise and courgette fries on the side.




Ingredients to serve 2

  • ½ tin x chickpeas – mash with potato masher
  • ½ tsp x ground cumin
  • 5g x coriander – remove stalks & chop
  • 1 x egg – beat lightly
  • 20g x panko breadcrumbs
  • ½ x carrot – peel & grate finely
  • 2 x courgettes
  • 1 x tomatoes – slice (½ cm)
  • ½ head x lettuce – remove leaves
  • 3 tbsp x sriracha mayonnaise
  • 1 clove x garlic – peel, grate finely & chop
  • 2 x burger buns
  • tin foil (from your pantry)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

  • 1 tin x chickpeas – mash with potato masher
  • 1 tsp x ground cumin
  • 10g x coriander – remove stalks & chop
  • 1 x egg – beat lightly
  • 40g x panko breadcrumbs
  • 1 x carrot – peel & grate finely
  • 4 x courgettes
  • 2 x tomatoes – slice (½ cm)
  • 1 head x lettuce – remove leaves
  • 6 tbsp x sriracha mayonnaise
  • 2 cloves x garlic – peel, grate finely & chop
  • 4 x burger buns
  • tin foil (from your pantry)
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 180°C. Prepare all ingredients as indicated above.

Step 2

Courgette chips: Cut into chips – cut the courgettes in half crossways. Now slice each piece lengthways (5mm). Finally place each piece down flat and cut lengthways again into chips – about 1cm wide. Place the courgette chips on a tin foil lined tray and cover them with a drizzle of olive oil, salt and black pepper. Place them in the oven and roast for 15-20 minutes until golden.

Step 3

Patties: Add the carrot, garlic, coriander, egg, breadcrumbs and cumin to the mashed chickpeas and season with salt and pepper. Mix well, then use your hands to shape the mixture into patties (one per person). Place a large frying pan on a medium-high heat and add a glug of olive oil. Place the patties into the pan and brown them for 2 minutes on each side. Remove the patties from the pan and place them onto a tin foil lined baking tray with a drizzle of olive oil. Place in the oven and bake for 10 minutes until cooked through.

Step 4

Burger buns: Place the buns on a baking tray and bake them in the oven for 5-10 minutes until brown and crusty. Remove them from the oven, cut in half and toast them in a dry pan for 30 seconds.

Step 5

Serve the burger bun topped with the lettuce leaves, tomato slices, chickpea patty and sriracha mayonnaise. Add the courgette chips on the side.
