Going Greek

Tabbouleh and beef meatballs, served with feta topped with mint leaves. Let your kids help you make the meatballs!




Ingredients to serve 2

  • 250g x beef mince
  • ½ x onion – peel & chop finely
  • 1 tsp x Mediterranean Mix
  • ½ x lemon
  • 1 x tomatoes – dice 1cm
  • ½ x red onion – peel & chop finely
  • 50g x feta – cut into cubes (1cm)
  • 5g x mint – chop leaves roughly
  • ½ x cucumber
  • ½ tin x chickpeas – drain & rinse
  • 2 tbsp x basil pesto
  • ¼ tsp x sumac
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Ingredients to serve 4

  • 500g x beef mince
  • 1 x onion – peel & chop finely
  • 2 tsp x Mediterranean Mix
  • 1 x lemon
  • 2 x tomatoes – dice 1cm
  • 1 x red onion – peel & chop finely
  • 100g x feta – cut into cubes (1cm)
  • 10g x mint – chop leaves roughly
  • 1 x cucumber
  • 1 tin x chickpeas – drain & rinse
  • 4 tbsp x basil pesto
  • ½ tsp x sumac
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Lemon: Using the fine side of a box grater, grate the peel of the lemon to create lemon zest, then cut in half and juice. Set aside.

Step 3

Cucumber: Cut the ends off the cucumber, then slice the four edges around the seeds. Dice these edges (½ cm) and discard the core containing the seeds (see inset pics).

Step 4

Meatballs: Mix these ingredients with the beef mince: white onion, the Mediterranean Mix and a generous seasoning of salt and pepper. Roll the mixture into golf ball sized meatballs (about 4-5 meatballs per person). Place a pan on a medium-high heat, add a drizzle of olive oil and when the pan is hot, cook the meatballs until golden and cooked through – 10-12 minutes. Shake the pan while cooking to make sure that the meatballs are golden all over.

Step 5

Chickpea salad: Mix together the chickpeas, cucumber, red onion, tomato, basil pesto and lemon zest and HALF the mint. Season with salt, pepper and lemon juice to taste.

Step 6

Feta: Add the REST of the mint to the feta cubes and mix with the sumac.

Step 7

Serve the chickpea salad with the meatballs and feta on the side.
