Vietnamese Mince Bowl

Delicious brown rice mixed through pork mince stir fry with a carrot, daikon and spring onion slaw. Topped with black sesame seeds and sesame oil.




Ingredients to serve 2

  • ½ cup x brown rice
  • 1 ½ cups x boiling water
  • 1 x carrots
  • ½ x daikon
  • ½ x lemongrass – chop finely
  • 1 clove x garlic – peel, grate finely & chop
  • ½ x chilli – slice thinly at an angle
  • 10g x ginger – peel & chop finely
  • 2 tbsp x soy sauce
  • 250g x pork mince
  • 2 x spring onions – slice thinly at an angle
  • 2 tsp x Japanese mayonnaise
  • 1 tsp x black sesame seeds
  • 2 tsp x sesame oil
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Ingredients to serve 4

  • 1 cup x brown rice
  • 3 cups x boiling water
  • 2 x carrots
  • 1 x daikon
  • 1 x lemongrass – chop finely
  • 2 cloves x garlic – peel, grate finely & chop
  • 1 x chilli – slice thinly at an angle
  • 20g x ginger – peel & chop finely
  • 4 tbsp x soy sauce
  • 500g x pork mince
  • 4 x spring onions – slice thinly at an angle
  • 4 tsp x Japanese mayonnaise
  • 2 tsp x black sesame seeds
  • 4 tsp x sesame oil
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above. Boil the kettle.

Step 2

Brown rice: Place the boiling water (see quantity above) in a saucepan with some salt. Add the rice and bring to the boil. When boiling cover and turn the heat down to low. Simmer (gently boil) for 35 minutes. Drain.

Step 3

Carrots & daikon: Cut into matchsticks – peel the carrots & Daikon. Cut them in half crossways. Now slice each piece lengthways (5mm). Finally place each piece down flat and cut lengthways again into a matchstick – about 5mm wide.

Step 4

Pork mince stir-fry: Place a large frying pan on a medium-high heat and add a drizzle of olive oil. When the pan is hot, add the lemongrass, garlic, chilli (optional) and ginger and cook for 1 minute. Add the mince and cook for 5 minutes until golden and cooked, then add the soy sauce and cook for another minute.

Step 5

Slaw: In a bowl, mix the carrots, daikon and spring onions with the Japanese mayo. Season with salt and pepper and set aside.

Step 6

Stir-fry mix: When the rice is done, mix the rice through the pork mince stir-fry.

Step 7

Serve the brown rice and pork mince stir-fry with the slaw on top. Sprinkle over the black sesame seeds and drizzle over the sesame oil.
