Chevin Farfalle

Chevin Farfalle

Farfalle with courgettes, covered in a creamy cheese sauce. Served topped with mixed seeds, chives and a drizzle of olive oil.




Ingredients to serve 2

  • 1 x courgettes
  • 50g x Fairview Black Pepper & Paprika Chevin
  • 5g x fresh chives – slice thinly
  • ½ x lemon
  • 150g x farfalle pasta
  • ½ tsp x chilli flakes
  • ¼ tsp x paprika
  • 2 tsp x Seed Mix
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

  • 2 x courgettes
  • 100g x Fairview Black Pepper & Paprika Chevin
  • 10g x fresh chives – slice thinly
  • 1 x lemon
  • 300g x farfalle pasta
  • 1 tsp x chilli flakes
  • ½ tsp x paprika
  • 4 tsp x Seed Mix
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)

Method

Step 1

Preparation: Prepare ingredients as indicated above. Boil the kettle.

Step 2

Lemon: Using the fine side of a box grater, grate the peel of the lemon to create lemon zest. Then cut in half and juice. Set aside.

Step 3

Courgette: Cut the ends off the courgettes and shave lengthwise into thin ribbons (2 to 3mm) using a potato peeler.

Step 4

Seed Mix: Place a small pan on high heat and dry toast the seed mix until lightly browned – about 2 minutes. Toss often to make sure they don’t burn. Remove from stove and set aside.

Step 5

Farfalle pasta: Pour the boiling water into a large pot on a medium-high heat and season well with salt. When the water is at a rolling boil, add the farfalle and cook for 10 minutes until al dente (cooked, but with a slight bite). Drain, saving some of the pasta water.

Step 6

Chevin sauce: Place a saucepan on a low-medium heat and gently melt the Chevin (goat’s milk cheese) with HALF the lemon juice, stirring every so often. It should take 2-3 minutes. Add all the lemon zest, paprika, chilli flakes and HALF the chives. Loosen the sauce with the reserved pasta water until it reaches the consistency of thick cream. Mix the sauce through the pasta and add the courgette ribbons. Cook for another minute. Season with salt, pepper and the REST of the lemon juice to taste.

Step 7

Serve topped with a drizzle of olive oil, a sprinkle of the Seed Mix and the REST of the chives.
