Chinese Stir Fry

A saucy sliced gammon steak served with a veggie stir-fry mixed with brown rice.




Ingredients to serve 2

  • ¾ cup x parboiled brown rice
  • 2 cups x water (for the brown rice)
  • 200g x gammon steak
  • ½ tsp x Chinese five-spice
  • 1 tbsp x chilli bean paste
  • 1 tbsp x oyster sauce
  • ½ tbsp x soy sauce
  • ½ tbsp x water (for the sauce)
  • 1 clove x garlic – peel, grate finely & chop
  • 10g x ginger – peel & chop finely
  • ½ x red onion – slice
  • 150g x green beans – remove ends & cut in half
  • ½ x lemon – cut into wedges
  • 1 tbsp x sesame seeds
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 1½ cups x parboiled brown rice
  • 4 cups x water (for the brown rice)
  • 400g x gammon steak
  • 1 tsp x Chinese five-spice
  • 2 tbsp x chilli bean paste
  • 2 tbsp x oyster sauce
  • 1 tbsp x soy sauce
  • 1 tbsp x water (for the sauce)
  • 2 cloves x garlic – peel, grate finely & chop
  • 20g x ginger – peel & chop finely
  • 1 x red onion – slice
  • 300g x green beans – remove ends & cut in half
  • 1 x lemon – cut into wedges
  • 2 tbsp x sesame seeds
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above. Boil the kettle.

Step 2

Brown rice: Pour the boiling water (see quantity above for the brown rice) into a saucepan, add the rice and some salt. Bring to the boil then gently simmer with the lid on for 18-20 minutes on a low heat. Drain if there is any excess water.

Step 3

Sesame seeds: Place a small pan on high heat and dry toast the sesame seeds until lightly browned – about a minute. Toss often to make sure they don’t burn. Remove from stove and set aside.

Step 4

Sauce: Mix together the oyster sauce, soy sauce, chilli bean paste and water (see quantity above for the sauce).

Step 5

Gammon: Season the gammon steak generously with pepper and sprinkle the Chinese five-spice onto both sides of the steak. Drizzle with olive oil. Place a dry pan on a medium-high heat and cook the steaks for 3-4 minutes a side until golden and cooked through. In the last minute of cooking, drizzle ¼ of the sauce over the steaks and cook until it is covered with the sauce, then add a squeeze of lemon juice. If the sauce starts burning in the pan, add a splash of water. Remove the steaks from the pan and set aside. Keep warm.

Step 6

Veggie stir-fry: In the same pan you used for the gammon steak, add a drizzle of olive oil, then add the onion, ginger, garlic, green beans and the REST of the sauce. Sauté the veggies for 3-4 minutes until the green beans are cooked, but still have a slight bite. Transfer the veggies to a bowl and mix in a squeeze of lemon juice. Mix in the brown rice.

Step 7

Serve the gammon steak with the rice and the veggie stir-fry mixed with the brown rice.
