Falafel

Lightly toasted pitta breads filled with Falafel and a red cabbage salad. Topped with tangy tzatziki.




Ingredients to serve 2

  • ½ x lemon
  • ¼ x onion – peel & chop finely
  • ½ tin x chickpeas – rinse & drain
  • 5g x parsley – chop
  • ½ tbsp x olive oil (from your pantry – for the falafel)
  • 1½ tsp x Greek Spice Mix
  • 1 tbsp x flour
  • ½ x cucumber
  • 100ml x yoghurt
  • ½ clove x garlic – peel, grate finely & chop
  • ½ tsp x dried mint
  • ⅛ x red cabbage – slice thinly
  • 3g x mint – tear
  • 2 x pitta breads
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

  • 1 x lemon

  • 10g x parsley – chop
  • 1 tbsp x olive oil (from your pantry – for the falafel)
  • 3 tsp x Greek Spice Mix
  • 2 tbsp x flour
  • 1 x cucumber
  • 200ml x yoghurt
  • 1 clove x garlic – peel, grate finely & chop
  • 1 tsp x dried mint
  • ¼ x red cabbage – slice thinly
  • 5g x mint – tear
  • 4 x pitta breads
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 180°C. Prepare all ingredients as indicated above.

Step 2

Lemon: Using the fine side of a box grater, grate the peel of the lemon to create lemon zest. Then cut the lemon in half and juice. Set aside.

Step 3

Falafel balls: Mash the chickpeas with a potato masher. Mix the chickpeas with the onion, parsley, olive oil (see quantity above for the falafel) and the Greek Spice Mix. Mix in the flour and use your hands to squeeze the mixture together to give it a paste-like texture. Roll the mixture into golf-ball-sized balls and flatten them slightly on both sides. Place a large frying pan on a medium-high heat and add a good glug of olive oil. When hot, place the falafel balls into the pan and cook for 2 minutes a side to brown them. Remove them from the pan, place them on a tin foil lined baking tray and bake them in the oven for 10 minutes until golden and cooked through.

Step 4

Tzatziki: Grate the cucumber finely and using your hands, squeeze out as much liquid as possible. Mix the cucumber with the yoghurt, garlic, dried mint, HALF the lemon juice and HALF the lemon zest. Season with salt & pepper to taste.

Step 5

Salad: Mix together the red cabbage, mint and HALF the lemon zest and juice. Add a drizzle of olive oil and season with salt and pepper to taste.

Step 6

Pitta breads: Toast the pitta breads lightly in the toaster.

Step 7

Serve by filling the pitta breads with tzatziki, falafel balls and the red cabbage salad.
