Venison Carpaccio Pizza

Venison Carpaccio Pizza

Sourdough base with mushrooms, mozzarella and venison carpaccio. Served with tomato salad.




Ingredients to serve 2

  • ½ x lemon
  • 100g x mixed mushrooms
  • 1 clove x garlic – peel, grate finely & chop
  • 2 x sourdough pizza bases
  • 4 tbsp x pizza sauce
  • 125g x grated mozzarella
  • 3g x thyme – pick off leaves & discard stalks
  • 40g x venison carpaccio
  • ½ x chilli – slice thinly
  • 2 x tomatoes – dice (½ cm)
  • 3g x basil – tear
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 1 x lemon
  • 200g x mixed mushrooms
  • 2 cloves x garlic – peel, grate finely & chop
  • 4 x sourdough pizza bases
  • 8 tbsp x pizza sauce
  • 250g x grated mozzarella
  • 5g x thyme – pick off leaves & discard stalks
  • 80g x venison carpaccio
  • 1 x chilli – slice thinly
  • 4 x tomatoes – dice (½ cm)
  • 5g x basil – tear
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 250°C. Prepare all ingredients as indicated above.

Step 2

Lemon: Using the fine side of a box grater, grate the peel of the lemon to create lemon zest. Then cut in half and juice. Set aside.

Step 3

Chilli: Place the chilli slices in a small bowl with a few glugs of olive oil.

Step 4

Salad: Mix together the diced tomatoes and basil. Drizzle with olive oil and season with salt, pepper, lemon juice and lemon zest to taste.

Step 5

Mushrooms: Separate the shimeji mushrooms (the small mushroom), slice the other mushrooms thinly. Place a frying pan on a medium-high heat with a drizzle of olive oil. When the pan is hot, add the garlic and the mushrooms and season with salt and pepper. Sauté for 2 minutes until the mushrooms are golden and cooked.

Step 6

Pizza: Spread the pizza sauce thinly over the bases with a spoon, leaving a 1cm edge. Sprinkle over the grated mozzarella, thyme and add the mushrooms. Place the pizza on an oven rack and cook for 3-4 minutes until the cheese has melted and the crust is golden. When the pizza is done, top with the venison carpaccio.

Step 7

Serve Prepare all ingredients as indicated above. Boil the kettle.
