Balsamic Roasted Sausages

Beef sausages baked in an oven tray with peppers, red onions and cherry tomatoes - flavoured with honey, thyme and balsamic vinegar. Served with herb and garlic ciabatta bread.




Ingredients to serve 2

  • 4 x beef sausages
  • 1 x red onions - peel and cut into quarters
  • 1 x peppers - peel, de-seed and cut into quarters
  • 100g x whole cherry tomatoes
  • 1 tbsp x balsamic vinegar
  • 1 tbsp x runny honey
  • 2 or 3 sprigs x thyme - strip the leaves off
  • 2 cloves x garlic - crush, peel and chop finely
  • 1 small loaf x ciabatta
  • olive oil (from your pantry)
  • salt and pepper (from your pantry)

  • 8 x beef sausages
  • 2 x red onions - peel and cut into quarters
  • 2 x peppers - peel, de-seed and cut into quarters
  • 200g x whole cherry tomatoes
  • 2 tbsp x balsamic vinegar
  • 2 tbsp x runny honey
  • 3 or 4 sprigs x thyme - strip the leaves off
  • 2 cloves x garlic - crush, peel and chop finely
  • 2 small loaves x ciabatta
  • olive oil (from your pantry)
  • salt and pepper (from your pantry)

Method

Step 1

Preheat the oven to 200⁰C.

Step 2

Place the sausages, onions, peppers and tomatoes in a large casserole dish or roasting pan. Scatter with freshly ground salt and pepper and half the thyme leaves. Drizzle with vinegar, honey and a few glugs of olive oil. Put the roasting pan in the oven for 25 minutes until the sausages are nice and brown. Turn the sausages halfway through the cooking time.

Step 3

Put about 3 or 4 tbsp olive oil, garlic, remainder of the thyme leaves, salt and pepper in a small bowl and mix. Slice the ciabatta loaf - but don’t cut all the way through (leave the base intact). Spoon the garlic mixture in between the slices and over the top. Wrap the loaf in tin foil and bake in the oven for about 15 minutes.

Step 4

To serve, divide the sausages and vegetables between the plates. Break off a few garlic slices for each serving.
