Method
Step 1
Preheat the oven to 200⁰C.
Step 2
Place the sausages, onions, peppers and tomatoes in a large casserole dish or roasting pan. Scatter with freshly ground salt and pepper and half the thyme leaves. Drizzle with vinegar, honey and a few glugs of olive oil. Put the roasting pan in the oven for 25 minutes until the sausages are nice and brown. Turn the sausages halfway through the cooking time.
Step 3
Put about 3 or 4 tbsp olive oil, garlic, remainder of the thyme leaves, salt and pepper in a small bowl and mix. Slice the ciabatta loaf - but don’t cut all the way through (leave the base intact). Spoon the garlic mixture in between the slices and over the top. Wrap the loaf in tin foil and bake in the oven for about 15 minutes.
Step 4
To serve, divide the sausages and vegetables between the plates. Break off a few garlic slices for each serving.
