Sausage & Pepper Kebabs

Sausage & Pepper Kebabs

Pork sausages rolled in a fragrant, herby balsamic marinade and then grilled on skewers with cherry tomatoes, bell peppers and red onion. Served with roasted sweet potatoes with sour cream and chives.




Ingredients to serve 2

  • 2 x sweet potatoes – slice 1cm thick
  • 1 tbsp x balsamic vinegar
  • ½ lemon x lemon
  • 3g x fresh thyme – chop
  • 3g x fresh rosemary – strip leaves off & chop
  • 1 clove x garlic – crush, peel & chop
  • ½ x chilli – de-seed & chop
  • 4 x pork sausages – cut in half
  • 1 x yellow peppers – cut into large chunks
  • ½ x red onion – cut into large chunks
  • 100g x cherry tomatoes
  • 75g x sour cream
  • 3g x fresh chives – chop finely
  • 4 x bamboo skewers
  • . x olive oil, salt and pepper (from your pantry)

Ingredients to serve 4

  • 4 x sweet potatoes – slice 1cm thick
  • 2 tbsp x balsamic vinegar
  • 1 x lemon
  • 5g x fresh thyme – chop
  • 5g x fresh rosemary – strip leaves off & chop
  • 2 cloves x garlic – crush, peel & chop
  • 1 x chilli – de-seed & chop
  • 8 x pork sausages – cut in half
  • 2 x yellow peppers – cut into large chunks
  • 1 x red onion – cut into large chunks
  • 200g x cherry tomatoes
  • 150g x sour cream
  • 5g x fresh chives – chop finely
  • 8 x bamboo skewers
  • . x olive oil, salt and pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

Heat the oven to 200⁰C. Place the sweet potato slices in a large casserole dish, drizzle with a little olive oil and sprinkle with salt and pepper. Roast for 30 minutes, turning halfway through. Remove from oven when done.

Step 3

Using a fine grater, grate the skin of the lemon to create lemon zest – be careful to grate the skin only and not the white pith underneath.

Step 4

In a large flat bowl, mix the thyme, rosemary, garlic, chilli, balsamic vinegar and lemon zest. Add the sausages and roll in the mixture until well coated. Thread alternate portions of yellow pepper, sausage, onion and cherry tomato onto the skewers to make kebabs. Place the kebabs on a baking sheet. Sprinkle any leftover herb mixture on top.

Step 5

Change the oven to grill and place the kebabs under the grill for 15 minutes, turning halfway, until cooked through. (If your sweet potatoes are still roasting, its fine, you can leave them in the oven at the same time.)

Step 6

In a small bowl mix the sour cream and fresh chives together and set aside.

Step 7

To serve, divide the kebabs and sweet potatoes between the plates. Add a dollop of sour cream and chives on the side.
