Solo: Marinated Tenderloin

Saucy tenderloin skewers served with a healthy barley and broccoli salad on the side.

Ingredients to serve 1

  • ¼ cup x barley
  • ¼ head x broccoli – chop very finely
  • ⅛ x red onion – peel & chop finely
  • ½ tbsp x cranberries – chop roughly
  • ¾ tbsp x roasted cashew nuts – chop roughly
  • ¾ tbsp x yoghurt
  • ¾ tbsp x mayonnaise
  • ¼ x lemon
  • ¼ clove x garlic – peel, grate finely & chop
  • ½ tsp x Paprika & Turmeric Mix
  • ¼ tsp x cayenne pepper
  • ⅛ sachet x tomato paste
  • 125g x beef cubes
  • 2 x kebab skewers
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)


Step 1

Barley: Boil the kettle. Place a large saucepan on medium-high heat. Add the boiling water and the barley and cook for 25-30 minutes until cooked but with a slight bite. Drain in a colander.

Step 2

Preparation: Prepare all ingredients as indicated above.

Step 3

Lemon: Using the fine side of a box grater, grate the peel of the lemon to create zest, then cut in half and juice.

Step 4

Barley and broccoli salad: Mix together the broccoli, red onion, chopped cranberries, cashew nuts, yoghurt and mayonnaise. Once the barley is cooked, let it cool down for a few minutes, then mix it in with the salad. Add HALF the lemon zest and HALF the lemon juice and season with salt and pepper to taste.

Step 5

Marinade: Mix together the garlic, the Paprika & Turmeric Mix, cayenne pepper and tomato paste in a bowl. Add the REST of the lemon zest and the REST of the lemon juice. Mix in a glug of olive oil.

Step 6

Beef cubes: Mix the beef cubes into the marinade and season with salt and pepper. Then slide them onto the skewers (about 3 cubes per skewer). Place a large frying pan onto medium-high heat and add the beef skewers. Keep turning them, using the skewers, to make sure they cook evenly on all sides (you might have to press down on the cubes, using tongs or a spoon). If the beef is looking a little dry, add a drizzle of olive oil to the pan. Cook for 6-7 minutes until golden and cooked (slightly pink inside).

Step 7

Serve the beef skewers with the barley and broccoli salad on the side.
