Solo: Burger & Kale Chips

Fresh red cabbage salad topped with a beef patty and kale chips with a chilli-lime mayo on the side.




Ingredients to serve 1

  • 50g x kale – remove stalks and tear
  • ¼ x onion
  • ¼ x lime
  • 125g x beef mince
  • ½ tsp x Asian Spice Mix
  • 5g x coriander – chop roughly (including stalks)
  • ¼ x chilli – deseed & chop
  • 1½ tbsp x Carb Smart mayo
  • ⅛ x red cabbage – slice thinly
  • 1 x radishes – slice thinly
  • ½ tsp x sesame oil
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 160°C. Prepare all ingredients as indicated above.

Step 2

Kale chips: Rinse the kale and dry in a tea towel. Line a baking tray with tin foil. Lay the kale on the tin foil (in a single layer) and drizzle with a little olive oil (just a little, don’t drench them). Scatter with a little salt and pepper. Toss to coat. Place in the oven and bake for 13-15 minutes until crisp. Every 5 minutes or so shake the pan. When done (you want them to be crispy but not browned), remove and set aside.

Step 3

Onion: Peel the onion, then cut in in half. SLICE HALF the onion thinly and CHOP the other HALF finely.

Step 4

Lime: Using the fine side of a box grater, grate the peel of the lime to create zest. Then cut in half and juice. Set aside.

Step 5

Patty: Mix together the mince, the CHOPPED onion, Asian Spice Mix and HALF the coriander. Season with salt and pepper to taste. Use your hands to shape the mixture into a patty. Place a large frying pan on medium-high heat. Add a drizzle of olive oil and when hot, add the patty. It should sizzle when it hits the pan (if the pan is hot enough). Cook the patty for about 6-8 minutes per side. Make sure it is nicely browned and cooked through.

Step 6

Chilli-lime mayo: In a bowl, mix together the zest of the lime and HALF the chilli with the Carb Smart Mayonnaise.

Step 7

Salad: In a bowl, mix together the red cabbage, the REST of the coriander, radishes, the SLICED onion, the REST of the chilli. Drizzle with the sesame oil and season with lime juice, salt and pepper to taste.

Step 8

Serve the burger patty topped with the chilli-lime mayo, on a bed of cabbage salad and the kale chips on the side.
