Asian Pork

Tender gammon steak served with an Asian salad, topped with fresh mint and beansprouts.




Ingredients to serve 2

  • 1 tbsp x sesame seeds
  • 1 x limes
  • ½ x cucumber
  • ¼ x daikon
  • 1 tbsp x soy sauce
  • ½ x chilli – deseed & chop finely (optional)
  • 10g x fresh ginger – peel & chop finely
  • ½ clove x garlic – peel, grate finely & chop
  • 1 tbsp x sesame oil
  • ⅛ x red cabbage – slice thinly
  • 2 x gammon steaks
  • 5g x fresh mint – tear leaves
  • 20g x beansprouts
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

  • 1 x cucumber
  • ½ x daikon
  • 2 tbsp x soy sauce
  • 1 x chilli – deseed & chop finely (optional)
  • 20g x fresh ginger – peel & chop finely
  • 1 clove x garlic – peel, grate finely & chop
  • 2 tbsp x sesame oil
  • ¼ x red cabbage – slice thinly
  • 4 x gammon steaks
  • 10g x fresh mint – tear leaves
  • 40g x beansprouts
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Sesame seeds: Place a small pan on high heat and dry toast the sesame seeds until lightly browned – about 2 minutes. Toss often to make sure they don’t burn. Remove from stove and set aside.

Step 3

Limes: Using the fine side of a box grater, grate the peel of the lime to create zest. Then cut in half and juice.

Step 4

Cucumber: Cut into matchsticks – here’s how: cut in half crossways. Slice each piece lengthways (5mm). Finally place each piece down flat and cut lengthways again into a matchstick – about 5mm wide.

Daikon: Cut into matchsticks – here’s how: peel and cut in half crossways. Slice each piece lengthways (5mm). Finally place each piece down flat and cut lengthways again into a matchstick – about 5mm wide.

Step 6

Sauce: In a bowl, mix together the soy sauce, chilli (optional), ginger, garlic, lime zest and juice and sesame oil.

Step 7

Salad: In a large bowl, mix together the cucumber, red cabbage and daikon. Add HALF the sauce and mix through. Season with salt and pepper to taste.

Step 8

Gammon: Cut perpendicular slits (about 2cm apart) all the way along the fatty edge of each steak to prevent it from curling up in the pan. Coat the gammon with some olive oil and black pepper (NO SALT). Place a pan on medium-high heat and cook the gammon for 3-4 minutes a side until golden. In the last minute, add a knob of butter and let it melt. If the edges of the gammon curl upwards while cooking, use tongs or the back of a spoon to push it down onto the bottom of the pan. In the last 30 seconds of cooking, add the REST of the sauce and cook until the gammon is cooked through. Remove from the pan.

Step 9

Serve the gammon with the salad and top with the toasted sesame seeds, torn mint leaves and beansprouts.
