Trout & Cucumber Baguette

Baguettes with cream cheese, trout, pickled cucumber and rocket. Served with sweet potato chips.




Ingredients to serve 2

  • 2 x sweet potatoes
  • ½ tsp x cayenne pepper
  • ½ tbsp x sesame seeds
  • ½ x lemon
  • 2 x baguettes
  • 4 tbsp x cream cheese
  • 5g x chives – chop finely
  • 35g x pickled cucumber ribbons
  • 20g x rocket
  • 80g x trout ribbons
  • 5g x dill – chop finely
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Ingredients to serve 4

  • 4 x sweet potatoes
  • 1 tsp x cayenne pepper
  • 1 tbsp x sesame seeds
  • 1 x lemon
  • 4 x baguettes
  • 8 tbsp x cream cheese
  • 10g x chives – chop finely
  • 70g x pickled cucumber ribbons
  • 40g x rocket
  • 160g x trout ribbons
  • 10g x dill – chop finely
  • olive oil (from your pantry)
  • salt & black pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Sweet potatoes: Cut into chips – cut the sweet potatoes in half lengthways, then cut them in half crossways. Lay them down flat and cut into matchsticks (chips). Place the chips on a tin foil lined baking tray with a drizzle of olive oil and a sprinkle of cayenne pepper. Roast in the oven for 30-35 minutes until golden and crispy.

Step 3

Sesame seeds: Place a small pan on high heat and dry toast the sesame seeds until lightly browned – about a minute. Toss often to make sure they don’t burn. Remove from stove and set aside.

Step 4

Lemon: Using the fine side of a box grater, grate the peel of the lemon to create zest. Then cut the lemon in half and juice. Set aside.

Step 5

Baguette: Place the baguettes in the oven and bake for 10 minutes until golden and crusty.

Step 6

Cream cheese: In a bowl, loosen the cream cheese with lemon juice and mix in the lemon zest and chives.

Step 7

Serve by cutting the baguette in half. Spread over the cream cheese and top with the pickled cucumber ribbons, rocket and trout ribbons. Sprinkle over the toasted sesame seeds, a crack of black pepper and dill. Serve with the sweet potato chips on the side.
