Cheeky Button Pasta

Creamy thyme infused chicken & mushrooms, served with gnocchi shells.




Ingredients to serve 2

  • 2 x chicken breasts
  • ½ tsp x dried oregano
  • 150g x gnocchi shells
  • ½ x onion – peel & chop finely
  • 150g x button mushrooms – chop roughly (2mm)
  • 1 clove x garlic – peel, grate finely & chop
  • 3g x fresh thyme – chop leaves finely
  • 125ml x cooking cream
  • 5g x fresh parsley – chop leaves roughly
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 4 x chicken breasts
  • 1 tsp x dried oregano
  • 300g x gnocchi shells
  • 1 x onion – peel & chop finely
  • 300g x button mushrooms – chop roughly (2mm)
  • 2 cloves x garlic – peel, grate finely & chop
  • 5g x fresh thyme – chop leaves finely
  • 250ml x cooking cream
  • 10g x fresh parsley – chop leaves roughly
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Gnocchi shells: Boil the kettle. Place a pot on medium-high heat and add the boiling water. When the water is at a rolling boil, add the gnocchi shells and cook for 8 minutes. You want it al dente, which is slightly chewy and translucent. Drain drizzle with a little olive oil to keep the pasta from sticking together. Keep warm.

Step 3

Chicken: Season with salt and pepper and coat with the dried oregano. Place a pan on medium-high heat with a knob of butter. When hot, add the chicken and cook for 3-4 minutes a side until golden (no need to worry if it’s not completely cooked through). Remove from the pan, shred with 2 forks and set aside.

Step 4

Mushroom chicken mix: Using the same pan you used for the chicken, on medium-high heat, add the onion with a pinch of salt and a drizzle of olive oil (if necessary) and sauté for 5 minutes. Add the mushrooms and cook for another 5 minutes until golden. Season with salt and pepper, then add the garlic, thyme and shredded chicken and sauté for 1 minute before pouring in the cream and water (½ cup for 4; ¼ cup for 2). Let it simmer (gently boil) for 2-3 minutes until the sauce thickens. Season to taste.

Step 5

Serve by mixing the pasta and parsley through the mushroom chicken mix.
