Method
Step 1
Prepare all ingredients as indicated above.
Step 2
Heat a little olive oil in a large frying pan over medium heat. Add the sausages and cook for 12 to 15 minutes, turning occasionally, until cooked through. Remove and keep warm.
Step 3
To make the salad dressing, mix the lemon juice and olive oil (see quantity above for dressing) in a bowl/mug.
Step 4
In a large salad bowl, mix these ingredients for the Tabbouleh: cauliflower, onion, parsley, mint, dill chives, tomato. Drizzle the dressing over the salad and season with freshly ground salt and pepper to taste. Toss to combine.
Step 5
To serve, divide the sausages and tabbouleh between the plates. Add a dollop of sour cream on the side.
