Solo: Gomasio Chicken

Tender chicken fillets served with a cabbage salad. Topped with chillies and Gomasio.

Ingredients to serve 1

  • ¼ tbsp x sesame seeds
  • ⅛ tsp x Maldon salt flakes
  • ⅛ x red cabbage – slice thinly
  • ⅛ x white cabbage – slice thinly
  • ⅛ x daikon – slice thinly
  • 5g x coriander – remove stalks & chop finely
  • ½ tbsp x soy sauce
  • ½ x lime
  • ½ tsp x xylitol
  • ¼ x chilli (optional) – chop finely
  • ¾ tbsp x sesame oil
  • ¼ clove x garlic – peel, grate finely & chop
  • 125g x chicken fillets
  • 10g x bean sprouts
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)


Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Sesame seeds: Place a small pan on high heat and dry toast the sesame seeds until lightly browned - about a minute. Toss often to make sure they don’t burn. Remove from stove.

Step 3

Gomasio: Mix together the toasted sesame seeds and the Maldon salt flakes.

Step 4

Lime: Using the fine side of a box grater, grate the peel of the lime to create zest. Cut the lime in half and juice.

Step 5

Salad: Mix together the red cabbage, white cabbage, daikon and coriander. Season to taste with the Gomasio (sesame seed and salt mix).

Step 6

Dressing: In a bowl, whisk together the soy sauce, the lime juice and lime zest, xylitol, chilli (optional), sesame oil and garlic. Make sure the xylitol dissolves completely. Season with salt and pepper and mix through the salad.

Step 7

Chicken: Season very lightly with salt and pepper. Place a large frying pan on medium-high heat and add a drizzle of olive oil. Sauté the chicken fillets for 5 minutes until golden and cooked through. Remove from the pan and season with the Gomasio.

Step 8

Serve the chicken with the cabbage salad, topped with the chilli (optional), bean sprouts and a sprinkling of Gomasio.
