Solo: Spiced Chicken & Broccoli

Juicy chicken fillets served with broccoli and a side of crunchy turnip crisps.




Ingredients to serve 1

  • 2 x turnips – slice finely
  • ¼ tsp x chilli flakes (optional)
  • ¼ clove x garlic – peel, grate finely & chop
  • ⅛ x onion – grate finely
  • ½ tsp x Peru Spice Mix
  • ¼ tsp x cayenne pepper (optional)
  • ¼ sachet x tomato paste
  • ¼ x lemon
  • 125g x chicken fillets
  • 1½ tbsp x water (for the chicken)
  • 3g x parsley – chop roughly
  • ¼ head x broccoli – cut into florets
  • salt & black pepper (from your pantry)
  • olive oil (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Turnip crisps: Line a baking tray with tin foil and add the turnip slices. Cover the slices with a drizzle of olive oil, salt and pepper and chilli flakes (optional) and roast for 15-20 minutes until golden. NOTE: Thinner slices could burn easily, so make sure you keep an eye on them. Remove the thinner slices when they are ready (golden).

Step 3

Lemon: Using the fine side of the box grater, grate the peel of the lemon to create zest. Then cut the lemon in half and juice. Set aside.

Step 4

Marinade: Mix together the garlic, onion, the Peru Spice Mix, cayenne pepper (optional) and tomato paste in a bowl. Add HALF the lemon zest and HALF the lemon juice. Mix with a glug of olive oil and season with salt and pepper to taste.

Step 5

Chicken: Mix the chicken fillets in with the marinade and season with salt and pepper. Place a large frying pan on a medium-high heat and cook the chicken for 2-3 minutes and add the water (see quantity above for the chicken). Turn the heat up, then add the broccoli and cook for 3 minutes until the broccoli is cooked and the sauce thickens. The chicken should be cooked through. Add the REST of the lemon zest and season with salt and pepper and lemon juice to taste.

Step 6

Serve the chicken and broccoli topped with the parsley and serve the turnip crisps on the side.
