Char-grilled Pork with Rocket & Blue Cheese

Boneless pork chops char-grilled in a balsamic vinegar and red onion marinade. Served with rocket, blue cheese and green grapes.




Ingredients to serve 2

  • ¼ x red onion – chop very finely
  • 2 tbsp x balsamic vinegar
  • 4 tbsp x olive oil (from your pantry)
  • 5g x fresh thyme – strip leaves off
  • 2 x boneless pork chops
  • 100g x grapes – cut in half
  • 40g x rocket
  • 100g x Fairview Blue Rock cheese - crumble
  • . x salt and pepper (from your pantry)

Ingredients to serve 4

  • ½ x red onion – chop very finely
  • 4 tbsp x balsamic vinegar
  • 8 tbsp x olive oil (from your pantry)
  • 10g x fresh thyme – strip leaves off
  • 4 x boneless pork chops
  • 200g x grapes – cut in half
  • 80g x rocket
  • 200g x Fairview Blue Rock cheese - crumble
  • . x salt and pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

To make the dressing, mix balsamic vinegar, olive oil, freshly ground salt and pepper together in a medium-sized bowl. Add the red onion and fresh thyme. Mix well and set aside.

Step 3

Put the pork chops in a shallow dish and sprinkle with salt. Add about half the dressing and rub all over the chops to coat well.

Step 4

Place a large dry grill pan or frying pan over medium to high heat. When hot, add the pork chops and cook for 5 minutes on each side – turning only once. Don’t overlap the chops – rather cook in batches if your pan is not big enough. When done, remove from heat and set aside.

Step 5

Place the grapes and rocket in a large salad bowl. Drizzle the remainder of the dressing over the salad and toss to combine.

Step 6

To serve, divide the pork chops between the plates. Top with salad and crumbled Blue Rock cheese.
