Bacon Carbonara

Tagliatelle served with bacon and courgettes, coated in a creamy carbonara sauce.

Ingredients to serve 2

  • 150g x tagliatelle
  • ½ x lemon
  • 100g x bacon – dice (½ cm)
  • 4 x courgettes – dice (½ cm)
  • ½ x chilli (optional) – deseed & chop
  • 1 x egg yolks (from your pantry) – beat lightly
  • 40g x hard cheese – grate finely
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 300g x tagliatelle
  • 1 x lemon
  • 200g x bacon – dice (½ cm)
  • 8 x courgettes – dice (½ cm)
  • 1 x chilli (optional) – deseed & chop
  • 2 x egg yolks (from your pantry) – beat lightly
  • 80g x hard cheese – grate finely
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)


Step 1

Preparation: Prepare all ingredients as indicated above. Boil the kettle.

Step 2

Tagliatelle: Place a large saucepan on medium-high heat and add the boiling water. When the water is at a rolling boil, add the tagliatelle and cook for 5-6 minutes. Make sure not to overcook the tagliatelle. You want it al dente, which is slightly chewy and uniformly translucent. Drain, reserving some of the pasta water for the carbonara. Drizzle the tagliatelle with a little olive oil to keep from sticking together. Take the pasta off the heat and set aside.

Step 3

Lemon: Using the fine side of a box grater, grate the peel of the lemon to create zest. Then cut the lemon into wedges.

Step 4

Bacon and courgettes: Place a pan on medium-high heat with a knob of butter. When the butter has melted, add the bacon. Cook for 3 minutes, then add the courgettes and chilli (optional) and cook for 4 minutes until the courgettes are slightly golden and the bacon crispy. Remove from the pan with the bacon fat and set aside.

Step 5

Carbonara mix: Mix together the egg yolks, lemon zest and hard cheese in a large bowl. Very slowly mix in the reserved pasta water, making sure not to scramble the egg yolks. Add the pasta to the carbonara, mix and toss through. Add the bacon and courgettes and season with salt, a good crack of black pepper and a squeeze of lemon juice.

Step 6

Serve in a bowl, straight away.
