Pork Chops with Mustard Sauce

Roasted pork chops with a delicious wine and cream based mustard sauce. Served with salad on the side.




Ingredients to serve 2

  • 2 x pork chops
  • ¼ x onion – peel and chop very finely
  • 100ml x white wine
  • 1 tbsp x cream
  • ½ tbsp x Dijon mustard
  • ½ tbsp x dried tarragon
  • 40g x salad leaves
  • ½ x lemon – halve and juice
  • 3 tbsp x olive oil for salad dressing (from your pantry)
  • . x olive, oil, salt & pepper (from your pantry)

  • 4 x pork chops
  • ½ x onion – peel and chop very finely
  • 200ml x white wine
  • 2 tbsp x cream
  • 1 tbsp x Dijon mustard
  • 1 tbsp x dried tarragon
  • 80g x salad leaves
  • 1 x lemon – halve and juice
  • 6 tbsp x olive oil for salad dressing (from your pantry)
  • . x olive, oil, salt & pepper (from your pantry)

Method

Step 1

Heat oven to 200°C.

Step 2

Place a large frying pan on the stove on high heat. Rub the chops all over with olive oil and season well with salt and pepper. When the pan is hot, place the chops in the pan and fry for 2 minutes each side turning only once with tongs (or spoons). When done, transfer the chops to a baking sheet and roast in the pre-heated oven for 7 minutes.

Step 3

Now add the chopped onion to the pan you just cooked the chops in. Sauté for 3 to 4 minutes in the pork fat. Add the wine to the pan and simmer for about a minute and then stir in the cream. After 30 seconds stir in the Dijon mustard. Remove from the heat and set aside.

Step 4

Mix the following ingredients in a cup to make salad dressing: olive oil (see quantity above), lemon juice, freshly ground salt and pepper. Place the salad leaves in a salad bowl and drizzle the salad dressing over the top. Toss to coat.

Step 5

To serve, divide the pork chops between the plates and add a dollop of mustard sauce on top. Add a serving of salad on the side.
