Pineapple Pork

Pineapple Pork

Egg noodles with carrots, pineapples, fresh mint and peanuts, drizzled with an Asian sauce.




Ingredients to serve 2

  • 2 nests x egg noodles
  • ½ x fresh pineapple
  • ½ x cucumber
  • ½ tbsp x fish sauce
  • 1 tbsp x soy sauce
  • ½ tbsp x sweet chilli sauce
  • ¼ x lemongrass – chop finely (see Youtube video)
  • 250g x pork mince
  • 5g x fresh coriander – pick off leaves & chop roughly
  • 10g x fresh mint – pick of leaves & chop roughly
  • 20g x peanuts
  • ½ x fresh chilli (optional) – slice thinly
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

  • 4 nests x egg noodles
  • 1 x fresh pineapple
  • 1 x cucumber
  • 1 tbsp x fish sauce
  • 2 tbsp x soy sauce
  • 1 tbsp x sweet chilli sauce
  • ½ x lemongrass – chop finely (see Youtube video)
  • 500g x pork mince
  • 10g x fresh coriander – pick off leaves & chop roughly
  • 20g x fresh mint – pick of leaves & chop roughly
  • 40g x peanuts
  • 1 x fresh chilli (optional) – slice thinly
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Egg noodles: Boil the kettle. Place the egg noodles in a bowl and pour over boiling water (enough to cover). Let the noodles sit for 13-15 minutes until softened. Drain the water.

Step 2

Preparation: Prepare all ingredients as indicated above.

Step 3

Pineapple: Use a sharp knife to remove the ends of the pineapple and cut down the sides of the pineapple to remove the skin. Cut lengthways down the pineapple, around the core. Discard the core and cut the rest of the flesh into cubes (2cm).

Step 4

Cucumber: Cut the ends off the cucumber then use a potato peeler to slice the cucumber into thin ribbons. Slice around the seeds of the cucumber, then discard the seeds.

Step 5

Mince: Place a large frying pan on medium-high heat with a drizzle of olive oil. Add the lemongrass and pork mince, season with a little salt and pepper and break the mince up in the pan with a spoon. Cook for 4-5 minutes until the mince is golden and cooked. Add the pork to the noodles and mix through.

Step 6

Sauce: In a bowl, mix together the fish sauce, soy sauce and sweet chilli sauce. Add HALF the sauce to the noodles and mix through.

Step 7

Serve by dressing the cucumber and carrot ribbons and pineapple cubes with the REST of the sauce. Top the noodles and mince with the cucumber, carrots, pineapple, fresh coriander, mint and peanuts. Sprinkle with the chilli slices (optional).
