Egg Fried Rice

Egg Fried Rice

Tofu coated in an Asian sauce served with fried rice, veggies and topped with fresh coriander.




Ingredients to serve 2

  • ½ cup x parboiled brown rice
  • 2 cups x boiling water (for the brown rice)
  • 2 x carrots
  • 1 tbsp x soy sauce
  • 1 tbsp x sweet & sour sauce
  • 1 x sweetcorn cobs – cut off kernels
  • 4 x spring onions – trim ends
  • ½ pack x tofu – cut into cubes (2cm)
  • 10g x ginger – peel & chop finely
  • 1 clove x garlic – peel, grate finely & chop
  • 1 x eggs (from your pantry) – beat lightly
  • 5g x fresh coriander – pick off leaves
  • ½ x chilli (optional) – deseed & chop finely
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 1 cup x parboiled brown rice
  • 4 cups x boiling water (for the brown rice)
  • 4 x carrots
  • 2 tbsp x soy sauce
  • 2 tbsp x sweet & sour sauce
  • 2 x sweetcorn cobs – cut off kernels
  • 8 x spring onions – trim ends
  • 1 pack x tofu – cut into cubes (2cm)
  • 20g x ginger – peel & chop finely
  • 2 cloves x garlic – peel, grate finely & chop
  • 2 x eggs (from your pantry) – beat lightly
  • 10g x fresh coriander – pick off leaves
  • 1 x chilli (optional) – deseed & chop finely
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: For speed, cook the brown rice before preparing the rest of the ingredients as indicated above.

Step 2

Brown rice (parboiled): Boil the kettle. Pour the boiling water (see quantity above) into a saucepan, add the rice and a pinch of salt. Bring to the boil, cover and gently simmer for 18-20 minutes on low heat. Drain if there is any excess water. Set aside to cool down slightly.

Step 3

Carrots: Cut matchsticks, here’s how: peel and cut in half crossways. Slice each piece lengthways (5mm). Finally place each piece down flat and cut lengthways again into a matchstick – about 5mm wide.

Step 4

Sauce: Mix together the soy sauce and sweet & sour sauce. Set aside.

Step 5

Veggies: Place a large pan on high heat and add a drizzle of olive oil. When hot, add the carrots and cook for 3-4 minutes, until charred. Set aside. Then add a little more olive oil and char the sweetcorn for 2-3 minutes, set aside. Lastly add another drizzle of olive oil and char the spring onions for 2-3 minutes, set aside and keep warm.

Step 6

Tofu: Using the same pan, place on medium-high heat with a drizzle of olive oil. When hot, add the tofu and cook for 3 minutes, tossing it until lightly browned. Add the ginger, garlic and HALF the sauce. Cook for another minute, then remove from the pan and set aside.

Step 7

Fried rice: Using the same pan, add the rice, pour in the beaten egg and stir-fry for 1-2 minutes. Season with salt and pepper.

Step 8

Serve the tofu with the fried rice, veggies and drizzle over the REST of the sauce. Sprinkle over the coriander and chilli (optional).
