Solo: Chicken & Bacon Salad

Green salad with chicken and crispy bacon, topped with hard cheese shavings and sunflower seeds.




Ingredients to serve 1

  • ½ tbsp x sunflower seeds
  • 125g x chicken fillets
  • 40g x homestyle bacon – slice in half, lengthways
  • ¼ tsp x Dijon mustard
  • ¼ clove x garlic – peel, grate finely & chop
  • ¼ tbsp x apple cider vinegar
  • ¼ tbsp x mayonnaise
  • 3g x parsley – pick off leaves & chop finely
  • ½ tbsp x olive oil (from your pantry, for the dressing)
  • ⅛ tbsp x water (for the dressing)
  • ¼ head x lettuce – remove leaves
  • 20g x baby spinach
  • ½ x tomato – cut into wedges (1cm)
  • 15g x hard cheese – slice with potato peeler
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Sunflower seeds: Place a small pan on high heat and dry toast the sunflower seeds until lightly browned – about 2 minutes. Toss often to make sure they don’t burn. Remove from stove and set aside.

Step 3

Bacon and chicken: Season the chicken fillets with salt and pepper. Place a large frying pan on medium-high heat and add a drizzle of olive oil. Lay the bacon slices down in the pan and cook for 1½ - 2 minutes a side until golden and crispy. Remove from the pan and set aside on a plate. Add the chicken fillets to the same pan and cook in the bacon fat for 4-5 minutes until golden and cooked through. In the last minute, add a small knob of butter (optional). Remove the chicken and bacon from the pan and set aside.

Step 4

Dressing: In a bowl, mix together the Dijon mustard, garlic, apple cider vinegar, mayonnaise and parsley. Whisk in the olive oil (see quantity above for the dressing) and water (see quantity above for the dressing) and season with salt and pepper to taste.

Step 5

Salad: In a bowl, mix together the lettuce, baby spinach and tomato. Add the bacon and chicken and mix through the dressing.

Step 6

Serve topped with the hard cheese shavings and toasted sunflower seeds.
