Method
Note: Thread some of the cherry tomatoes, basil leaves and cheese cubes onto the skewers provided (see picture).
Step 1
Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above. Boil the kettle.
Step 2
Beef bangers (sausages): Place the sausages on a tin foil lined baking tray with a drizzle of olive oil. Place in the oven and cook for 20-25 minutes until golden and cooked through. Remove from the oven and set aside.
Step 3
Mashed potatoes: Place a large saucepan on high heat and add the boiling water with a little salt. Add the diced potatoes, and cook for about 10 minutes until tender. Drain, add a few splashes of milk, a knob of the butter, salt, and pepper to taste and mash well with a potato masher. Set aside and keep warm.
Step 4
Salad: In a bowl, mix together the tomatoes, the cherry tomatoes and basil. Add a drizzle of balsamic vinegar and olive oil and mix through.
Step 5
Serve the beef bangers with the mash and the salad on the side. Serve with the kiddie skewers.
