Method
Step 1
Preparation: Prepare all ingredients as indicated above. Boil the kettle.
Step 2
Lime: Using the fine side of a box grater, grate the peel of the lime to create zest. Then cut in half and juice. Set aside.
Step 3
Egg: Place a large saucepan on medium-high heat and add the boiling water with a little salt. Bring the water to a simmer (gently boil), add the egg and cook for 6½ minutes for a soft boiled egg. The white should be set, and the yolks (yellow) should be runny. Peel and cut into quarters, set aside.
Step 4
Sauce: In a bowl, mix together the soy sauce, sesame oil, wasabi paste, ginger and the lime zest and juice. Set aside.
Step 5
Gammon: Coat the gammon with some olive oil and black pepper (NO SALT). Place a pan on medium-high heat and cook the gammon for 3-4 minutes a side until golden and cooked through. In the last minute, add HALF the sauce. If the edges of the gammon curl upwards while cooking, use tongs or the back of a spoon to push it down onto the bottom of the pan. Remove from the pan and cut into strips.
Step 6
Stir-fry: Cut the broccoli into florets and cut the bigger florets in half. Using the same pan you used for the gammon, add the broccoli with a splash of water and cook for 2 minutes. Then add the cabbage and spring onions and cook for another 2 minutes until the broccoli is bright green and cooked, but with a slight bite. Turn off the heat, add the gammon slices and mix through.
Step 7
Serve the pork stir-fry with the egg, topped with the mint, coriander and mixed sprouts. Drizzle over the REST of the sauce.
