Mediterranean Chicken

Barley coated in Mediterranean Olive Paste, topped with tender chicken fillets and veggies.




Ingredients to serve 2

  • ½ cup x barley
  • 2 tbsp x Mediterranean Olive Pesto
  • 300g x chicken fillets
  • ½ x onion – slice thinly (½ cm)
  • 100g x button mushrooms – slice thinly
  • ½ tsp x paprika
  • 4 x courgettes – dice (1cm)
  • 5g x fresh parsley – chop leaves roughly
  • 3g x fresh thyme – pick off leaves
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 1 cup x barley
  • 4 tbsp x Mediterranean Olive Pesto
  • 600g x chicken fillets
  • 1 x onion – slice thinly (½ cm)
  • 200g x button mushrooms – slice thinly
  • 1 tsp x paprika
  • 8 x courgettes – dice (1cm)
  • 10g x fresh parsley – chop leaves roughly
  • 5g x fresh thyme – pick off leaves
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: For speed, cook the barley before preparing all ingredients as indicated above.

Step 2

Barley: Boil the kettle. Place a large pot on a medium-high heat, add the barley and pour in the boiling water (enough to cover by 5cm – NO SALT). Lower the heat and simmer (gently boil) for 30 minutes until cooked, the barley should have a slight bite. Drain, add a drizzle of olive oil and mix in the Mediterranean Olive Pesto. Set aside.

Step 3

Chicken fillets: Season the chicken fillets with salt and pepper. Place a frying pan on medium-high heat with a drizzle of olive oil and a knob of butter. When the butter has melted, add the chicken and brown for 4-5 minutes until golden and cooked through. Remove from the pan and set aside.

Step 4

Courgette and mushroom mix: Using the same pan, add a drizzle of olive oil and a knob of butter. When the butter has melted, add the onion with the thyme and cook for 5 minutes with a pinch of salt. Add the mushrooms and paprika and cook for another 5 minutes until slightly golden. Add the courgettes and cook for 5 minutes until lightly browned. Add the chicken fillets back into the pan and heat for 1 minute to warm it up. Season with salt and pepper.

Step 5

Serve the barley topped with the courgette and mushroom mix and sprinkle over the fresh parsley.
