Indian Beef

Indian spiced beef cubes served with a kale salad with fried onions, toasted flaked almonds and dates.




Ingredients to serve 2

  • 3 tbsp x yoghurt
  • 1 tbsp x Mother-in-law curry powder
  • 250g x beef cubes
  • ½ x lemon
  • ½ x chilli (optional) – deseed & chop
  • ½ clove x garlic – peel, grate finely & chop
  • 75g x kale – remove stalks & tear leaves
  • ½ x onion – slice thinly
  • 2 x pita breads – cut into cubes (2cm)
  • 20g x flaked almonds
  • 30g x dates – chop roughly
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Ingredients to serve 4

  • 6 tbsp x yoghurt
  • 2 tbsp x Mother-in-law curry powder
  • 500g x beef cubes
  • 1 x lemon
  • 1 x chilli (optional) – deseed & chop
  • 1 clove x garlic – peel, grate finely & chop
  • 150g x kale – remove stalks & tear leaves
  • 1 x onion – slice thinly
  • 4 x pita breads – cut into cubes (2cm)
  • 40g x flaked almonds
  • 60g x dates – chop roughly
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Lemon: Using the fine side of a box grater, grate the peel to create zest. Then cut into wedges.

Step 3

Beef: Mix together the yoghurt and Mother-in-law curry powder (it’s quite spicy, so use less for mild) and mix in the beef cubes. Season with salt and pepper and set aside to marinate.

Step 4

Dressing: Mix together lemon zest, garlic and a squeeze of lemon juice. Slowly whisk in a drizzle of olive oil and season with salt and pepper. If you like the heat, feel free to add chilli.

Step 5

Kale: Add the dressing to the kale and massage with your fingers to soften.

Step 6

Onion: Place a pan on medium heat with a drizzle of olive oil. When hot, add the onion and a pinch of salt and fry for 7-9 minutes until golden and crispy. Remove from the pan and set aside.

Step 7

Croutons: Place the pita cubes on a tin foil lined baking tray with a drizzle of olive oil and season with a little salt. Toast for 6-7 minutes until golden. After 3 minutes of toasting, give the pan a shake.

Step 8

Flaked almonds: Place a pan on medium-high heat. Add the flaked almonds to the dry pan and toast for 2-3 minutes until lightly browned. Shake the pan often so they don’t burn.

Step 9

Beef: Place a pan on medium-high heat, add a knob of butter and let it melt. Add the marinated beef and cook for 6-7 minutes until cooked, but still slightly pink inside.

Step 10

Serve by topping the kale with the croutons, onions, flaked almonds and dates. Serve the beef with the salad on the side.
