Method
Step 1
Preparation: Prepare all ingredients as indicated above.
Step 2
Courgettes: Cut matchsticks, here’s how: cut in half crossways. Slice each piece lengthways (5mm). Finally place each piece down flat and cut lengthways again into a matchstick – about 5mm wide.
Step 3
Sauce: Mix together the soy sauce and Carb Smart Sweet Chilli sauce, set aside.
Step 4
Veggies: Place a large pan on high heat and add a drizzle of olive oil. When the pan is hot, add the spring onions and char for 2-3 minutes, set aside. Drizzle in a little more olive oil, add the courgettes and char for 2-3 minutes, set aside and keep warm.
Step 5
Pork mince: Using the same pan, place on medium-high heat with a drizzle of olive oil. When the pan is hot, add the pork mince and season with salt and pepper. Cook for 3 minutes, breaking the mince up with a spoon, before adding the ginger, garlic and HALF the sauce. Cook for another 1-2 minutes until golden and cooked through. Remove from the pan and set aside.
Step 6
Fried cauliflower rice: Place the same pan on medium-high heat with a drizzle of olive oil. Add the grated cauliflower and cook for 1 minute. Season with salt and pepper and pour in the beaten egg. Cook, stirring, for 1-2 minutes.
Step 7
Serve the pork mince with cauliflower rice and the veggies. Drizzle over the REST of the sauce and sprinkle over the coriander and chilli (optional).
