Solo: Classic Burger

Burger bun topped with a juicy beef patty, pickled cucumber and basil. Served with butternut crisps.

Ingredients to serve 1

  • ¼ x butternut
  • ¼ x lemon
  • 1 tbsp x mayonnaise
  • ¼ clove x garlic – peel, grate finely & chop
  • ¼ x chilli (optional) – deseed & chop
  • 150g x beef mince
  • 3g x fresh parsley – remove leaves & chop roughly
  • ⅛ x onion – chop very finely
  • 15g x mature cheddar – slice thinly
  • 1 x burger bun
  • ½ x tomato – slice thinly (1 cm)
  • 20g x pickled cucumber ribbons
  • 3g x fresh basil – remove leaves
  • . x olive oil (from your pantry)
  • . x salt & pepper (from your pantry)
  • . x tin foil (from your pantry)


Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Butternut crisps: 4 box: Cut the butternut lengthways into quarters. 2 box: Cut the butternut in half lengthways. Scrape the seeds out with a spoon and discard. Then slice the butternut crossways into very thin crisps, about 2mm thick. On a tin foil lined tray, lay the butternut crisps out in a single layer. Drizzle over a little olive oil and season with salt and pepper. Toss to coat. Roast in the oven for 20-25 minutes until golden and cooked.

Step 3

Lemon: Using the fine side of a box grater, grate the peel of the lemon to create zest. Then cut the lemon into wedges.

Step 4

Aioli: Mix together the mayonnaise, lemon zest, garlic and chilli (optional). Add a squeeze of lemon juice to taste.

Step 5

Patty: Season the beef mince generously with salt and pepper. Add the parsley and onion and mix well. Use your hands to shape the mince into a patty. Place a large frying pan on medium-high heat. Add a drizzle of olive oil and when hot, add the patty. It should sizzle when it hits the pan (if the pan is hot enough). Cook the patty for about 4 to 6 minutes per side. Make sure it’s nicely browned and cooked through. Remove from the pan, top with the mature cheddar slices and place on a tin foil lined baking tray in the oven. Cook for 5 minutes, until the cheese melts.

Step 6

Burger bun: Place the bun in the oven and bake for about 5-10 minutes until golden and crusty. Remove from the oven, cut in half and dry toast in a pan for about 30 seconds.

Step 7

Serve by topping the toasted burger bun with the tomato slices, patty, pickled cucumber and basil. Top with the other half of the toasted bun. Serve with the butternut chips and the aioli on the side.
