Method
Step 1
Preparation: Preheat the oven to 200°C, for the pita breads. If you would rather use the toaster, no need to preheat the oven. Prepare all ingredients as indicated above.
Step 2
Lemon: Using the fine side of a box grater, grate the peel to create zest. Cut in half and juice.
Step 3
Pickle: In a bowl, mix together the red onions, balsamic vinegar and a pinch of salt. Set aside and stir every now and then.
Step 4
Yoghurt: Mix together the yoghurt, garlic, lemon zest and dill. Add lemon juice to taste and season with salt and pepper. Set aside.
Step 5
Koftas: Mix together the beef mince, parsley, the Warm Spice Mix and season generously with salt and pepper. Divide the mixture into golf ball sized balls and roll each ball into a cigar shape. Add a drizzle of olive oil to a pan on medium-high heat. When hot, place the koftas in the pan and cook for 10 minutes, turning them every few minutes with tongs (or spoons) to make sure they brown all over.
Step 6
Pita breads: If using the oven toast for 2 minutes, or pop them in the toaster until golden.
Step 7
Serve the pita breads filled with red cabbage, pickled red onion, koftas and yoghurt.
